Hi, I'd like to try this recipe, but could you help with the mushroom quantity? If I skip portobellos, how many button mushrooms should I use?

Hiya Tanja, great question! If you're skipping the portobello mushrooms, you can use about 2 to 2½ cups (150 - 200 g) of button mushrooms as a substitute. We hope you enjoy the recipe!

Dear PUL team, I would like to prepare this dish but I don't have a steamer so I was wondering if I could also just boil the cauliflower in enough water? Or is there the risk that the cauliflower might absorb too much moisture and the purée results too watery? Thank you ❤️

Hi Martina, you can boil the cauliflower instead of steaming it if that's more accessible! A bit of extra moisture might also help give the purée a nice creamy texture. With boiling, the cauliflower will likely cook in less time. Perhaps check with a fork around the 8 - 10 minute mark. If they are fork tender, you can drain them off. If needed, you can even let it sit for a few minutes to help reduce any extra water. Adjust the flavour of the purée with extra nutritional yeast, salt, and pepper. Loved this recipe! It's so quick, but really filling. I have an electric steamer, so only needed one pan on the hob. The mashed cauliflower was a nice change from potato and the seasoning made it super tasty. The portions are big with this one, especially for the Ragu, so I'm happy to have leftovers for tomorrow!

Doubling this recipe, it took my husband 2 hrs to cook, so making 4 servings definitely increases the cooking time. But at the same time, it felt like a luscious Sunday roast-type dinner.

Super quick to make and very flavourful. I did not have the cauliflower so I opted for cornmeal - polenta and came out very goulash-y
I added fresh green herbs instead of italian mix - basil, thyme, origano, sage, lemon balm and cilantro.

Delicous and very satisfying! I mixed half cauliflower and half potatos for a bigger mash portion, but in the end I thought it might’ve been filling enough with just the cauliflower mash
