I'm from India. Couldn't find a couple of ingredients here. Substituted the cannelini beans with black-eyed beans/cowpea beans ( and yep definitely needed approx half a cup of milk to make it moist) and the soy cooking cream with coconut cream . Turned out just fine.
Regular white beans create a little bit drier texture- compared to what was shown on the picture 🤷♀️ Further experiments are needed to nail that chewy texture of gnocchi 🙌
I didn’t read the comments before making this & I made the mistake to weigh the beans but use a cup for the flour which made the dough too dry 😅I’ll make sure to weigh the flour next time cuz I still liked it !
☝️I recommend using a small food processor to blend the beans (for 4 servings, otherwise a big food processor) then transferring them to a big bowl to mix in the rest of the gnocchi ingredients.

Delicious, although I had some trouble with the immersion blender the make the beans smooth (it felt more like a hard plumbing job 😂), but that could be due to the regular white beans as the canellini beans were unavailable. Besides the "plumbing", a delicious meal and fun to make my own gnocchi!

I usually don’t like to spend too much time on a meal but today is an Easter holiday and I decided to give this recipe a try.
It was so worth it! Super tasty.
I used canned kidney beans because that’s what I had and the dough was VERY dry. So I added flax seeds with water to add moisture and it worked.
I wonder if it was because I used canned beans?
I live in the US, and I’m looking for an alternative to soy cream. Would Silk’s or Trader Joe’s heavy whipping cream alternative work the same way?
