SOOO delicious - wow! I could eat this whipped tofu by the spoonful. Highly recommend keeping the chickpeas in the oven an extra 10 min to make the crispier - but other than that - this recipe is perfect! Can’t wait to make it again 😂

I squished the garlic and replaced the balsamic with pomegranate molasses because I don’t like vinegar.
Whipped tofu was a little bland, but there was plenty of flavour from other ingredients so I think it worked out really well together. Will definitely be making again!
Meal prepping this for a weeknight dinner. Had a little taste - SO GOOD!! I added a little extra salt to the whip, but it came out wonderfully!
Made it today for lunch and it was great! The tomatoes were delicious and with the whipped tofu it matched amazingly. Only thing that was a bit annoying were the baked chickpeas which were chewy and kinda dry, next time I’ll probably only cook them.
But overall a nice recipe:)
