This was really easy and tastes great! The second time I made this recipe I followed it precisely but I used a Hokkaido pumpkin and for some reason the spread turned out very gooey. Still tasty, just a really unpleasant consistency 😅 So maybe don't use Hokkaido for this one if you are thinking about trying it.

Hey Sanna, thanks for the heads-up! Hokkaido pumpkins can sometimes give a different texture since it's less starchy than other varieties. Glad it still tasted good, though 😊

For some reason, our spread just tastes like coconut oil, which I don't really like at all :( did we do something wrong or could we just use more olive oil instead of coconut?

Hey Stefanie! It sounds like you might have used unrefined coconut oil instead of refined coconut oil. Unrefined coconut oil has a strong coconut flavour, which could explain the taste you're noticing. Refined coconut oil, which we recommend, is neutral in taste and aroma. If you click the asterisk (*) next to the coconut oil in the ingredient list, you'll find a note explaining this. If you prefer, you can definitely substitute more olive oil instead of coconut oil for a different flavour profile. I hope this helps for now! :)

Absolutely delicious, and love the caramelised flavour of the pumpkin paired with vegan feta. I did not add any yoghurt to the food processor, wanting to see how the vegan feta+pumpkin behaved. Worked so well to lightly press across two slices of bread, and no crumbly mess while eating😋

Hey Tamara, this spread contains 200 grams (7 ounces) of feta, which amounts to slightly more than 1/2 cup for four servings, though you can always add more to taste 😊
