Definitely a new staple! Quick, super tasty and filling. I used pan fried shallots instead of the pickled red onions.
I made this today for lunch and itโs amazing. I used pickled silver skin onions instead of the pickled red onions and I put a pinch of chilli flakes once I spread the mixture on the toast. It was just too good and I think itโs my new favourite for breakfast, too, but perhaps without chilli flakes for breakfast.

I love this idea of adding beans to the avocado for additional protein and fiber! The pickled onions add just the right tang and are totally worth making.

Made this for breakfast this morning as I had a language course so needed energy and to stay full till a late lunch and this did the trick! Super tasty and filling. I added some lemon juice to the left overs to keep the avocado fresh and that works well :)
