Directions
- Finely chop the pressed tofu into very small pieces. Transfer to a large bowl and mix together with the mayonnaise, nutritional yeast, chives, mustard, curry powder, turmeric, salt, and pepper.
- Assemble the sandwiches by adding a layer of lettuce, sliced cucumber, and a generous layer of "egg" salad on top of the bread.
- Cut in half if desired, and enjoy!
Notes
- †Kala namak, is a salt often used in South Asian cuisine. The sulphur compounds give the salt an egg-like smell and flavour.

I’ve been making this recipe for 2 years without the Kala namak and I loved it on its own, but when I found the black salt at the Indian supermarket two weeks ago I knew I had to make a new batch to test it out…and OH. MY. GOSH. 👩🏻🍳🤌🏽 it makes such a difference in flavor and really kicks it up a notch in the best way! My mom (who’s NOT vegan) actually thought it was egg salad when I gave her a spoonful. I will be making this more often!
This is my go-to recipe when I don't know what I want, or can't be bothered to cook. It's so delicious! I tend to use dried chives and reduce the amount, so I always have the ingredients in my pantry to make this. I think a thick white bread is best for this as it takes me right back to childhood ❤️

This is basically indistinguishable from an egg salad sandwich, which is to say it’s incredibly delicious! Tip: shred your tofu instead of cutting it. Saves some time and gives you the exact same result.
I can see the recipe, but this is a staple set in stone from childhood, don’t believe this can be replicated l. Would make if I didn’t want guests to dine at any future lunches. 😬

I've been making this quite often in the past years, one of our favourite breakfasts ever (and not only is it super easy and quick to make but we've always been able to find all ingredients, no matter which continent we've lived on, which is always a plus).

I personally crumble the tofu in a hot pan for 5 minutes so the scramble is warm when eating right after making it.
And I put 2 tbsp mayo in and 1 tbsp plant based greek yoghurt instead of 120 ml mayo, just so it is somewhat healthier and less dense.

This is amazing! I will admit curry powder threw meals a day off a bit (not sure why) and I am so shocked at how much this tastes exactly like an egg salad (from what I remember 😉) brought back memories! I too always had it on soft bread with lettuce when I was growing up. We also made little finger sandwiches too. Just WOW!!!
I love using kala namak for that “eggy” taste. I also like using chickpeas in place of the tofu when I’m out of tofu. Easy and delish!

Tried this recipe just today to compare it with another one that had much more 5star ratings. So glad I did coz this is hands down the winner. It looked AND more importantly, tasted like the real thing. It had a more complex flavor. I only used half of the suggested curry powder but will try more next time.

Egg salad sandwiches are my favourite! This was easy, quick and allowed me to use up the tofu I had in the fridge. It’s not my favourite, but more than likely it’s due to texture. I have a hard time with tofu. If you are okay with the texture, this will more than likely be a winner!
I LOVE this recipe! It’s a regular on my meal rotation. I tried it with some fresh dill instead of chives which gave it a great twist!
So simple, but absolutely nails the egg salad sandwich flavor. Tastes just how I remember, without the ick factor, and only takes 3 minutes to whip up. Love!
The only thing I’d recommend is a little less curry powder. While it lends an awesome flavor, 1/2tsp was too much in my opinion.

And for 4 eggs just 3 Tbs of Mayo , rest same, and skipped the yeast and kala namak as haven’t had those and was so delicious and filling, thanks so much !!

Made the egg mixture and used it as the eggs in my breakfast burritos! I even prepped and froze a bunch of burritos and they all reheated well. Secretly tested them out on my non vegan father (he had one regular egg bfast burrito and the vegan one I made) and he preferred the vegan one. Better flavor!

This was easily 5 stars. We are new to a vegan lifestyle and this is one of the most flavourful sandwiches we have had. It's definitely going to be on regular rotation. I didn't have chives so finely diced celery instead -- nice crunch. And since I didn't quite have enough of my homemade mayo, I simply added some of my hummus and a dribble of water. Since I always have pickled red onions on hand, we added that to the sandwich -- winner. We both loved it and thank you so much for sharing this recipe -- and for all you do.

I was a bit skeptical about tofu straight from the pack and a few simple ingredients, but how wrong was I! This is incredibly delicious! Just made it for breakfast and it's super filling too. Never in my life have I had a vegan egg salad taste better than actual egg salad and then more. This may be one of my favorite sandwiches. It was super easy and quick to make. My husband LOVED it! We've decided to have this in our lunch rotation at least once or twice a week. Seriously, one of the best things I've ever had.
I loved it so much! I adapted a bit because I was missing some things (like mustard. My groceries store didn't have a single pot of mustard on sell anymore ^^;;), but it was delicious, and it made it clear that this recipe is rather versatile in a "throw what's in the fridge on it" way. Egg salad sandwiches aren't a thing here (France), that I know of, so it was a great find. Very practical recipe, super easy and fast to make, and very filling for my post-workout hunger.
The only thing that I need to remember is to lower the amount of mayo. I didn't use vegan mayo (I'm not actually vegan, but I don't eat that much meat and I love your recipes, so it works out great) and I think it was probably... heavier? than vegan mayo. Or next time I should get light mayo maybe. Might even be healthier.
Anyway, great recipe, I love how easy, inexpensive, and filling it is.

This is awesome. I've made it three times already and every time I'm surprised at how good it tastes. It's just so easy and quick to make, just throw all the ingredients together and mix. I also love that it doesn't really need any special fresh ingredients, just things I keep on hand anyway (like tofu), which makes this an easy fallback dish that I need to remember to make more often!

I was skeptical that this recipe would replace an egg salad sandwich but gave it a try and was I ever wrong. It was delicious, the flavour and the texture are great together. This recipe will definitely be a regular one in our house. I did not have the kala namak spice but had all of the other ingredients and we loved it!

This is the best "egg salad" dupe I have ever had. It's so good that it's become a regular part of our home menu. I know it says best when eaten the same day but I think it's perfect for meal prep. It's fast to put together and I make the mix on Sunday to have prepped to use for the next couple days of lunches. Sometimes I put it on bread, sometimes I put it in a wrap, sometimes it's just in a bowl with greens, tomatoes, red onion like a "deconstructed" sandwich bowl. Just a great filling.
I subbed the chives with a few shakes of dried parsley and used mashed chickpeas instead of tofu and also added some apple cider vinegar for acidity

I don't like eggs and I'm meh about sandwiches but this is delicious. I just used normal salt as I didn't want the sulfur taste and added pickles. Packs up perfectly for work or at home I've been toasting my bred before assembling.

Egg salad sandwiches used to be my fave before I was vegan so I was super excited to try this recipe! I loved the combination of the curry flavours alongside the kala namak so give the 'egg' salad a delicious twist. Also it is crazy how similar tofu is to egg in texture in this form!

I was absolutely blown away from this recipe. I used to have egg salad sandwiches a lot growing up, so when I saw this on the video I was over joyed. I made it today and shared some with my mother she couldn't tell the difference from regular egg salad. I didn't have chives so I made it will some fresh dill and added sweet pickle relish to make it closer to what I had as a kid. This was wonderful, thank you for yet another fantastic recipe!

This was super tasty and easy! I did not have extra firm tofu because it is not readily accessible to me, but I pressed firm tofu for 20 mins and it worked just as well! Could I use half vegan plain yogurt and half mayo to try to make it healthier?
