Vegan Reuben Tofu Sandwich

This is our vegan take on the classic Reuben sandwich, a deli staple traditionally made with corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing. We kept the essentials - tangy sauerkraut, melty vegan cheese, and a rich, flavourful sauce - while replacing the meat with smoky, paprika-seasoned tofu. Though the original is served on rye, any bread you love will work just as well!
