This sandwich is easy to put together and combines some of our favourite ingredients: velvety hummus, accompanied by a burst of flavour from a vegan pesto, creamy avocado, and tangy roasted bell pepper nestled between two slices of toasted bread.

Ingredients

  • 5.8 oz (165 g)
    firm tofu, pressed, cut ½ cm thin
  • 1 Tbsp (8 g)
    cornstarch
  • ⅛ tsp
    salt
  • ½ Tbsp (7 mL)
    vegetable oil
  • 4
    slices multi-grain bread, toasted
  • ¼ cup (62 g)
  • ¼ cup (60 g)
    vegan green pesto
  • 1 cup (30 g)
    fresh baby spinach
  • 2
    roasted red bell peppers from a jar, well drained
  • 1
    avocado, sliced
  • ¼
    lemon, juiced
  • 1 pinch
    ground black pepper, to taste

Directions

  1. Add the tofu, cornstarch, and salt to a bowl and gently massage to coat.
  2. Add oil to a non-stick large pan on medium-high heat. Cook the tofu until golden, about 5 minutes per side.
  3. Spread the hummus and pesto on the toasted bread.
  4. Add the spinach, bell pepper, tofu, and avocado. Add a squeeze of fresh lemon juice and pepper to the top, and enjoy!

Storage

  • Best to enjoy the day it's made.

Made it with home made pesto, and it was sooo delicious 🤤🤤 I forgot to put the meal prepped tofu in the sandwich but it was good without it anyways😅

This is a very nice sandwich, too much pesto for me, but I guess this is the secret of the taste and flavour. I don't like tofu, but in this sandwich is very good. Thank you for this amazing mouth watering experience ! 🤤

Good flavor but everything in the sandwich was so slippery it all fell apart after that first bite. I’ll have to try wrapping it next time.

Day 2 of meal prepping was equally delicious with day 1! To be fair, I am positively predisposed to anything containing pesto, love the stuff. But although I had overcooked the tofu, there was so much flavour that it wasn't an issue at all. Yay 🙂

Perfect combination! Like all of your recipes, this was VERY good!
The hummus, pesto and bread were all homemade and worth the effort.
