5.8 oz (165 g)firm tofu, pressed, cut ½ cm thin

1 Tbsp (8 g)cornstarch

4slices multi-grain bread, toasted

¼ cup (60 g)vegan green pesto

1 cup (30 g)fresh baby spinach

2roasted red bell peppers from a jar, well drained

1avocado, sliced

¼lemon, juiced

1 pinchground black pepper, to taste

Directions
- Add the tofu, cornstarch, and salt to a bowl and gently massage to coat.
- Add oil to a non-stick large pan on medium-high heat. Cook the tofu until golden, about 5 minutes per side.
- Spread the hummus and pesto on the toasted bread.
- Add the spinach, bell pepper, tofu, and avocado. Add a squeeze of fresh lemon juice and pepper to the top, and enjoy!

Made it with home made pesto, and it was sooo delicious 🤤🤤 I forgot to put the meal prepped tofu in the sandwich but it was good without it anyways😅
This is a very nice sandwich, too much pesto for me, but I guess this is the secret of the taste and flavour. I don't like tofu, but in this sandwich is very good. Thank you for this amazing mouth watering experience ! 🤤
Good flavor but everything in the sandwich was so slippery it all fell apart after that first bite. I’ll have to try wrapping it next time.

Day 2 of meal prepping was equally delicious with day 1! To be fair, I am positively predisposed to anything containing pesto, love the stuff. But although I had overcooked the tofu, there was so much flavour that it wasn't an issue at all. Yay 🙂

Well. This was a delicious surprise! I’m trying to eat through the cupboard supplies we had, and found a sad looking jar of peppers. This was not what I was expecting. It’s lovely!!
