This sandwich is very tasty!!! I made my own tofu by soaking slices overnight with tamari, smoked paprika, garlic & onion powder + a little bit of oil. Sliced vegan mozzarella worked great as the “cheese”. I ended up using a gluten free baguette as the bread. Due to timing, I had to toast and prepare the sandwich ahead of time and ate it a few hours later. It was still delicious!

I was really hyped to try this one, but I think it didn't do it for me in the end... The taste of pineapple was way too strong and I couldn't really taste the other ingredients. Otherwise, it was pretty good. Maybe I will make it with less pineapple next time?

Hiii Chrysiida, thanks a bunch for trying the recipe and for sharing your experience with it. You could definitely scale back the pineapple or slice it thinner so it’s more of a subtle accent instead of the main flavour. Hopefully that helps it shine more evenly next round 💛

This ended up being an absolute flavor BOMB that I was not expecting🤣 At first I wondered if it was too many flavors haha but overall it was really good!! I marinated my own smoked tofu for 36 hours which was delicious. And I was fortunate to have an extremely sweet pineapple. I also made the sweet chili sauce suggested and it was a nice addition! Definitely not necessary to boost flavor but if you like a spicy sweet and tangy flavor, it’s good with it. I did not have ciabatta so I used English muffins which I felt were similar. It felt like a Hawaiian pizza “spam” breakfast sandwich haha. Really good! I’d make it again but honestly if your pizza sauce and pineapple are extremely flavorful, the smoked tofu might be an unnecessary step. But if you can’t find very ripe pineapple or your sauce is more bland, a strongly flavored tofu would balance that. I had all three so it packed a punch😂. A great recipe if you dislike tofu and want to learn to enjoy it.

A prefect, simple lunch for when working from home. The quick prepping and cooking provided a nice (an not too long) break in the middle of the day, before again being seated in front of the computer 😊
