This was a great lunch, lengthy to cook but worth it. I had to switch the sage to thyme and roasted the squash in the oven but it turned out delicious. Highly recommend.

Chouette plat d'automne/hiver. Manque cependant d'un peu de goût, comme tout les risottos d'ailleurs. Pensez à le pimper un peu niveau gustatif

For me the squash did not turn brown, but just went mushy quite quickly. It was fork tender after 15 min already. Next time I'll try frying without the lid at first to maybe get some browning. The mushy pumpkin turning into puree made frying the onions and rice more tricky, but the end result tasted great so five stars anyways!

A smaller, crowded pan traps more steam, which can lead to mushiness, so a larger heavy-bottomed pan might work best for browning. Alternatively, you could try starting without the lid to let moisture evaporate, which should help achieve that golden color before covering it to finish cooking. Different squashes also have varying moisture levels, which can affect browning too. Thanks for experimenting, and I hope these tips help next time! 😊

This dish is creamy, rich in flavour and very moreish. I admit I'm not a fan of cooking risotto, and I had my reservations about the flavour but, as usual, it was great. I do have a couple of comments though: - This took much longer to cook than expected as the squash took a bit to cook. Do you think this dish would work by baking the squash instead of frying it?
- While I loved this dish, it is really low on protein. I'm going to have to eat something higher in protein now to make up for that. Is there anything you can recommend adding in for a decent amount of protein for next time? - The biggest downfall in this for me was the length of time it took to cook. I made this as a mid-week dish and it took me nearly an hour and a half to cook. I may have just been slow, but it wasn't a quick one, which I had hoped for.

Loved this recipe, it turned out great! For those adverse to apple cider vinegar, I would maybe do 1 TBSP instead of 2. I actually made it without any butter either, and still came out fantastic! All four of us would make it again ❤️

This has easily become one of our favorite recipes, it's just so good! Never would've thought to fry sage, but 👌🏻👌🏻👌🏻 Even my mom who doesn't like sage because she thinks it smells like sweaty armpits loved it 😂 We recently made a big batch and froze a good bit of it to have something ready if we need it and it still tastes great and is creamy even after thawing it!

Very tasty! Pleasantly surprised by the taste of the crispy sage, and so easy to make! Used the leftover oil in which the sage fried for a part of the butternut squash to add some extra flavor. And we used regular risotto rice instead of what the description said. Thanks for this recipe!
