There's nothing quite like the combination of crispy, warm, toasted bread with a refreshing, juicy, herb-and-garlic-infused tomato topping to tantalize the tastebuds.
Add all of the ingredients to a medium bowl and gently toss until combined.
Although the dish can be enjoyed immediately, it’s best to cover the tomatoes and let them sit in the fridge for at least 2 hours to allow the flavours to meld, if possible.
Serve fresh on toasted bread, or even toast together with the bread in the oven for a warm bruschetta. Garnish with fresh basil if desired. Enjoy!
