This recipe draws inspiration from the classic Italian Caprese salad, offering a simple yet delightful breakfast or lunch sandwich option. All it takes is a handful of quality ingredients—opt for the juiciest tomatoes you can find—and assemble them on toasted bread with a hint of tanginess from the balsamic vinegar reduction. Keep in mind that the taste of vegan mozzarella can vary between brands, so choose one that suits your palate.

I made this into a sandwich pressed with a contact grill and it was delicious ☺️

I love this. I eat it almost everyday for lunch at work. I eat it on rye bread which is so delicious. And I also sometimes add pine nuts. 🥰🥰😍

So easy to make, filling and delicious for brunch. We had a lovely courguette cream alongside!
I was asked to make them again a few times already 🥰😋

These quick little toasts are so tasty and perfect for hot summer evenings. I paired with the White Bean Salad (smaller helpings) and it was a perfect dinner.

Hi! Would love to make these, but which mozzarella balls do you recommend? (In NL)

Hi D, we've tried this one with the Veganella brand which has a lovely taste. We've also tried with the Züger brand which has a nice texture, but a more pronounced taste 😊
