This delicious variation of the classic bruschetta incorporates sweet, deeply caramelized peaches that complement the savory tomatoes to perfection. Made with canned peaches, this recipe offers a slice of summer all year round. But of course, if peaches are in season, feel free to use fresh ones instead!

Ingredients

Bruschetta

  • 2
    canned peaches
  • 2 cups (300g)
    cherry tomatoes, halved
  • 1
    garlic clove, crushed
  • ½ cups (12g)
    fresh basil, chopped
  • 1 Tbsp (15ml)
    extra-virgin olive oil
  • ½ tsp
    salt
  • ½ tsp
    ground black pepper

Assembly

  • 1 Tbsp (15ml)
    olive oil
  • 4
    slices sourdough bread
  • ¾ cups (170g)
    plain vegan cream cheese

Directions

  1. Bring a grill pan to medium-high heat. Then cook the peaches until deeply caramelized, around 3 - 4 minutes on each side. Set aside to cool down slightly.
  2. Add the remaining bruschetta ingredients to a large bowl. Set aside.
  3. Once cool enough to handle, dice the peaches.
  4. Add them to the bowl and stir to combine. Set aside
  5. Heat the oil in a grill pan over medium heat. Toast the bread slices until golden on both sides.
  6. To assemble, spread the cream cheese on the toasted bread and top with the peach and tomato mixture. Enjoy!

Storage

  • Best enjoyed immediately.
  • The bruschetta components can be stored in separate airtight containers in the fridge for up to 3 days.
