Ingredients

Bruschetta

  • 2
    canned peaches
  • 2 cups (300g)
    cherry tomatoes, halved
  • 1
    garlic clove, crushed
  • ½ cup (12g)
    fresh basil, chopped
  • 1 Tbsp (15ml)
    extra-virgin olive oil
  • ½ tsp
    salt
  • ½ tsp
    ground black pepper

Assembly

  • 1 Tbsp (15ml)
    olive oil
  • 4
    slices sourdough bread
  • ¾ cup (170g)
    plain vegan cream cheese

Directions

  1. Bring a grill pan to medium-high heat. Then cook the peaches until deeply caramelized, around 3 - 4 minutes on each side. Set aside to cool down slightly.
  2. Add the remaining bruschetta ingredients to a large bowl. Set aside.
  3. Once cool enough to handle, dice the peaches.
  4. Add them to the bowl and stir to combine. Set aside
  5. Heat the oil in a grill pan over medium heat. Toast the bread slices until golden on both sides.
  6. To assemble, spread the cream cheese on the toasted bread and top with the peach and tomato mixture. Enjoy!

Storage

  • Best enjoyed immediately.
  • The bruschetta components can be stored in separate airtight containers in the fridge for up to 3 days.

I tried this recipe. But I changed the recipe a bit. I took ripe peaches and then pan roasted them which made them tender and jam like texture. I added it on the toast along with the chesse and cherry tomatoes. Perfect lunch!

Thanks for taking the time to share your swap experiences, Alekhya! So glad that the bruschetta recipe with peaches was enjoyed ☺️

So refreshing! Normally I hate the sweet and savoury mixes but this, woah, amazing!

So so so good! Love the sweet touch from the peach, amazing on a warm summer day.

A winner! We have made this several times now with fresh (grilled) peaches. Looking forward to having it on rotation all summer – such a delicious mixture of flavors!

Siddhi Shah - June 17, 2025, 5:03 a.m.

So instead of canned peach if I am using the fruit do I need to add sugar to caramelise it?

PUL small logo PUL Team - June 17, 2025, 6 p.m.

Hi Siddhi! Yup, there's no need to add sugar if you're using fresh peaches (especially if they're ripe nad naturally sweet). Their natural sugars will caramelize beautifully with the heat. That said, you can always add a small sprinkle of sugar if you prefer it sweeter, just add it close to the end and keep an eye on it so it doesn't burn ✨

So fresh and delicious for summer! I drizzled mine with a balsamic reduction.

This is so good! Thank you for your easy recipes that are so delish!

UmmAli - June 12, 2025, 5:11 a.m.

Delicious and so fresh! I only had canned diced peaches, so they didn’t get the caramelization like the whole fruit, but it still turned out great 😊

Thanks a bunch for sharing your experience with the recipe, UmmAli!

Janelle - June 11, 2025, 4:37 p.m.

Can you make a recipe for vegan cream cheese? That’s not available where I live. Or is there a recipe online you’d recommend?

PUL small logo PUL Team - June 11, 2025, 6:05 p.m.

Hey Janelle, thanks so much for the request! We don’t currently have a plain vegan cream cheese recipe, but we’ve noted down the idea for future content. In the meantime, you might find our Herby Garlic Cream 'Cheese' or the whipped tofu spread from our Chive & Onion Whipped Tofu Toast recipe helpful. You can tone down the herbs and spices in them to make the spreads more plain if you'd like ☺️

Allready made this twice this weekend, using fresh nectarines instead of peaches. Very simple and so delicious! 💛
