Pintxos are small tapas typically served in bars all over the Basque Country. They got their name from the Spanish ‘pincho’ or ‘spike’, as they are normally served on a slice of bread hold together by a toothpick. These pintxos come in a variety of flavors and ingredients and, for this vegan rendition, we went for a veggie skewer grilled until caramelized. Infused in a garlicky parsley oil, it is as Spanish as it gets. You will love it!

Technically, these are called Gilda's, pintxos are a bit different. In any case, it looked really good

Hey E, thanks so much for sharing this! This recipe was made by one of our Spanish teammates, and from what we’ve learned from her, pintxos is more of an umbrella term, and Gildas are one of the classic types within it. Ours is just a playful veggie-inspired twist on the tradition. So glad it caught your eye 😊
