My partner is fructose intolerant and can't have any sugar, so I roasted a small carrot alongside the peppers and eggplants to give it some sweetness. It worked surprisingly well! Thanks for this simple recipe!!

Thank you for sharing a recipe from my region. This is usually made in a large batch and then stored in jars to be used later, during the winter. Ummm, I don't know the English word, but here is a tradition to preserve food for winter and ajvar has an important role here. I'm so happy you've shared this recipe for a smaller batch, so maybe I'll actually try it for the first time :)
