Chipotle adds a spicy, smokiness to this refried bean recipe. It's no exaggeration that we've eaten this by the spoonful, it's so good. Have it with baked tortilla chips, raw veggies, crackers, or loaded into wraps and sandwiches.
To a large pan on medium-high heat add the oil and onions. Cook for 5 - 7 minutes, or until the onions are golden.
Next, add the garlic, cumin, paprika, bouillon cube, cayenne, and black pepper. Cook for 1 minute, breaking up the bouillon cube and letting the spices get fragrant and toasted.
Add the beans, water, and chipotle. Stir and simmer uncovered on medium heat for 10 minutes.
Optional step: transfer half of the cooked bean mixture to a tall container or bowl and blend with a immersion blender. Alternatively, blend in a regular standing blender until creamy and smooth.
Use a wooden spoon to roughly mash the remaining beans in the pan, leaving some texture.
Add the blended portion of the beans back into the pan of mashed beans, along with the lime juice and stir to combine.
Allow it to slightly cool before serving. Top with fresh cilantro and chopped onions if desired. Enjoy!

†Reduce the amount of water for a thicker spread that's more suitable for wraps.
†The chipotle sauce we use is a blend of chipotle peppers with water, vinegar, and spices. We do not recommend using a mayo-based chipotle sauce in this recipe.

These turned out great! We used them for a chip dip :) I didn’t have chipotle sauce, so I used one whole chipotle pepper in adobo sauce. Then I worried it would be too spicy for the kids, so after the 10 minute cook I split it in half and only blended half into the beans.

This is hands down my go-to refried beans recipe. The flavor is amazing, it is so easy make and is great in meal prepped breakfast burritos. I am the only plant based eater in our home, I can meal prep this and use it multiple times to feed myself, so I am not making two meals at a time. I do share this with them, sometimes, okay maybe I have been known to hide it in the fridge so it lasts for a couple of days for me. What they don't know won't hurt them!

Beautiful dip or spread, instead of the sauce I used a teaspoon of tomato paste and a small spicy pepper, still came out tasting great. The spice blend was really nice and smelled amazing when added to pan. Definitely recommend making it.

Hi Phillipa, thanks for the question! We've frozen the refried beans in our freezer burritos before and they've kept well. We'd recommend allowing the beans to cool and storing usable portions in air-tight containers for up to ~3 months. We hope this helps for now ☺️

Absolutely love this recipe. We eat it as suggested but we are also find of adding a dollop of it to salads or on German rye bread toasted or sourdough bread toasted. I use it like humus in sandwiches and pickles. It really is lovely. So nutritious too as pinto beans are one of the best beans you can consume.
