Making these chili loaded sweet potato fries are a labour of love, but well worth it! Topped with a homemade creamy cheese sauce, salsa, and avocado - honestly, they look like they came right out of one of my sweet potato dreams!
Line two baking trays and preheat the oven to 430°F (220°C)*.
Cut the sweet potatoes into ½ inch (1 cm) thick sticks**. Transfer the potatoes to a large bowl.
Drizzle the cut potatoes with the oil and sprinkle with the cornstarch and spices.
Toss to coat the potatoes.
Divide the fries over the baking trays. Spread the fries as far apart from each other as possible. Bake for 20 minutes.
Flip the fries and switch the upper and lower baking tray. Continue to bake for another 20 - 25 minutes.
Add oil to a large pot on medium-high heat. When hot, add the onion and garlic, and cook for 3 - 4 minutes.
Then add the spices. Cook for another 1 minute, stirring throughout.
Add the remaining chili ingredients. Cook at a gentle simmer, partially covered, for 20 minutes. Stir occasionally.
To make the cheese sauce, cover the cashews with boiling water and let them soak for at least 10 minutes, then drain.
Add the drained cashews and remaining sauce ingredients to a high-speed blender. Blend until smooth.
Add the blended mixture to a saucepan and heat through. Then set aside.
To make the salsa, combine the ingredients in a small food processor or chop finely and mix together in a bowl.
Assemble by placing the fries on a plate. Top with chilli.
Drizzle over the cheese sauce, salsa, and any other desired garnishes. Enjoy!
Notes
* We used top and bottom heating (not fan-assisted/convection).
** Try to cut the fries in similar thicknesses, so they will cook evenly.
Storage
Best if enjoyed immediately.
The chili, cheese sauce, and salsa can be made ahead of time and stored in an airtight container in the fridge for up to 3 days.

Very yummy! I used the sweet white potatoes, the chips didn't turn out as good as I didn't cut them in a uniform way. But the whole combination was very wholesome. Will be making it more often.

THE best chili I’ve ever made! I’m not vegan but going more and more vegetarian so I left the cheese sauce out and used cheese instead but it’s AMAZING and so flavorful! Thank you for all the great recipes! We also love the one pot mushroom pasta!

We are not bad cook but... there remai s a mystery to my husband and I. We have question on the sweet potators fries. We have tried these 3 times. Sadly, they remain soggy even though we follow the instructions "religiously". We have even tries to bake the on a wire rack. Nothing works: they remain soggy. Fan or no fan oven: we tried both... any explanations? Additional tips? Thank you.

Hi John and Catherine, thanks for the kind words 😊 How disappointing to hear about the sogginess though! When fries come out soggy, it's usually a sign that there's too much moisture or they were overcrowded on the pan.
Being sure to dry the fries well before placing them in the oven is the first step we can take. Ovens can be tricky since they vary, although it sounds like lowering the heat a tad might help. This will increase the baking time but can allow the fries to dry out more. You can increase the heat closer to the end if needed and crispier fries are desired too.
Making sure the fries are evenly spread out on the pan and not touching one another is the last culprit we can think of. We hope this helps for now, and do let us know how it goes if you give it another try!

I have tried a lot of pick up limes recipes and this one is my all time favorite!!! I make it as often as I can. Only think I’m not a fan of is laying out the fries on the oven sheets 😫. Far too tedious. I wish I could at least find some precut fries that weren’t covered in extra garbage. But if you’re up for it I promise it is welllll worth it.
