This spicy soup is inspired by Mexican ‘Sopa Azteca’, which uses homemade fried tortilla strips. For this faster —and one pot!— version, we used store-bought tortilla chips instead. The addition of adobo sauce makes it a touch spicy, and the black beans also boosts the protein content of the soup while making it a filling and delicious meal packed with flavour.

I loved it. I used peppers in adobe sauce and then removed them. Added onions, guac, siete chips on top.

Chipotle adobo sauce is a bit pricey in the UK, any recommendation to make it a bit more budget friendly? Smoked paprika maybe?

Hey Émilie, so glad you loved the soup! 😊 It’s definitely one of those recipes that packs a punch with simple ingredients. For a more budget-friendly alternative to chipotle adobo sauce, smoked paprika is a great idea! You could try combining smoked paprika with a bit of cayenne or chili powder for heat, and maybe a splash of vinegar to mimic that tangy element from the adobo sauce. It won't be exactly the same, but it should give you a similar smoky and spicy flavour! Let us know how it turns out if you give it a try!

Ridiculously good. This is gonna be a regular. The add-ons really make it - don't skip those. I didn't have the chipotle sauce and I didn't blend the onions/tomatoes up and it was still super yummy (and easy!!).
