Plantains are usually bigger than regular bananas and have thicker skin. They are used for a variety of dishes depending on the colour. This dish uses medium ripe plantains, they are yellow and have black spots, and are slightly sweet. With the spiced black beans, spicy mayo and refreshing salsa, this meal becomes super filling & flavourful.

It is a very tasty and unique dish, so many good parts together!
I made the sauce by blending chipotle adobo peppers from a can with the mayo and lemon juice until it was smooth, and it worked very well! (It was just too spicy for me so I added more mayo to dilute).
I had red beans instead of black ones, still very tasty but the texture was a bit more mushy, I guess the black beans would not have crumbled as much, I'll try to find some next time!
Overall, I think it was an amazing recipe, that I'll make again (especially to impress guests!), but it won't be a daily one for me, too many little things makes my brain think I worked way harder than I actually did while cooking this XD

I found "chipotle adobo peppers" in a can, but it seems it might not be a sauce? I'll cook this dish tomorrow, I might just have to mix what's in this can in a blender to make it a sauce, I don't know, I'll try that and report back once cooked and tasted!

Hey Nohya, here in the Netherlands, it's sold as "chipotle sauce" at our local grocery store, but it closely resembles the adobo sauce found in the can of chipotle adobo peppers you have. However, ours is a bit thinner, more acidic, and less spicy than that. So if you're using the sauce from your can, start with a smaller amount to avoid too much heat! You can also substitute chipotle adobo sauce with a hot sauce like Sriracha or Tabasco. Blending the chipotle peppers from your can works too... just start with less, as it'll likely be spicier! 💛

Thank you for your answer! I've indeed discovered that blending and adding the same amount is too spicy for me so I've added more mayo and used the extra chipotle adobo mayo for two other recipes from your app ^^ It was really good, so next time I'll just use like a third of the ammount on the recipe and it should work well!

Loved it! 10/10 for sure!!! First I didn’t get the combination with plantains, but it is such a good flavor combination! We added jalapeños as a garnish which also worked very well

Great flavor combo, simple to make and its a great recipe to pair with the chipotle spiced black bean oatmeal breakfast because they share ingredients in common and it uses up the left overs.

This dish reminded me of the month I spent in Ecuador , plantains and rice were staple menu items. So I felt nostalgic eating it.

I liked this recipe very much. Do not skip out in making the salsa. I just used some jarred salsa I had in hand and although it was adequate I am sure the fresh juicy tomatoes would have been better!
