This was quite good and satisfying! I made it gluten free using Lupini pasta. I did not have soy cream so used 1/2 cup soy milk with 2 tbs of tahini. Thanks for the wonderful recipe!
A slightly spicy creamy sauce. We liked it. Used silken tofu instead of the soy cream and no cilantro or cheese and still found it flavorful. Easy to make😁

Great quick week night meal and a hit with the kids! I subbed hummus for the cooking cream to cut down on saturated fat (we are watching cholesterol) and served it on a bed of sauteed kale. Can't wait to make it again, thanks!

This was the first PUL recipe I did not enjoy. The sauce just wasn’t there for me. I had to add pickled red onions (PUL recipe) and some salsa verde to actually enjoy this meal. My husband also added that the corn and black beans should be doubled in amount.
Super easy recipe to follow, affordable ingredients, flavourful taste! We (my two flatmates and I) shall definitely do this again!

This is a lovely and speedy meal. My blender gave up the ghost today, so I wasn't able to blend the sauce. I cooked it down a little longer and added a bit more seasoning to compensate, but it was still a tasty pasta dish. I'll make this again once I get a new blender to try the smooth sauce!

A bit bland by itself for my taste, even when topped with lime and feta, and somehow also not very filling. Despite making three servings, I still had most of my jars of beans and corn left over, so I think I would just throw the extra stuff into the sauce next time. I transformed this into a big salad bowl the next day though, using romaine, balsamic vinegar, extra veg and faux chicken and that was very good! ☺️

Was really tasty! Everyone I live with really loved it. just like Jonathan, I used vegan Parmesan because that’s all I had. Would love to try it with vegan feta next time :)
Delicious pasta, I already made it twice in two days. I was missing some more greens so I added spinach which works really well. I used the vegan parmesan recipe instead of the feta which was unavailable, also a great match :)
