Loubia is a Moroccan stew using white beans, onion, tomato, garlic, herbs and a blend of warm spices. While traditionally dried beans are used to make this dish, we chose to use cooked beans to cut the cooking time in half. This dish is popular as a main or side dish across North Africa and the Middle East, and we get why! It's delicious, comforting and nutritious.

Hey Brenda, starting with a 15-oz can is a safer bet. You can always add more if needed, but the 28-oz might make the stew more watery or mellow unless you simmer longer to concentrate the flavours 🙂

Had the leftovers OMG so good. Had them with pickles -very nice combination. Will have to try it with celery. And agree this is a pantry dish. I had no tomatoes and used more paste.

One of my favourite winter dishes! We have a similar one in Greece and we call it “fasolada”, from the word “fasoli” which means bean.the difference is that we do not use garlic and cilantro,but we add celery!! Thanks for sharing all these tasty dishes Sadya!!

I cannot believe how delicious this was! I realized after starting that I had chickpeas not white beans but even with the substitution this was fantastic. I love how other than the onion it was entirely a pantry meal. Perfect for when you’re low on groceries and energy and want something cozy and comforting.

Hi Naomi, this stew should freeze well! Just let it cool completely before transferring it to an airtight container, and you can store it in the freezer for up to 3 months. Just note that the beans will become softer after reheating. Happy meal prepping 🤗

Ok, here are my thoughts:
Overall a very tasty recipe. I like vegetable stock cube in this recipe. The spices are great. It's perfect dish for winter but can be enjoyed all year round imo.
However the recipe suggests adding tomato paste first and then beans, crushed tomatoes, etc.
I found a recipe that suggests adding the crushed tomatoes first (to onion/garlic) and the tomato paste later on (when adding the beans, water, parsley, coriander).
When I was following the PUL recipe initially I almost burnt the dish as it was dry (onion/garlic, tomato paste, spices) - perhaps I should have lowered the heat a bit.
All in all, it's super tasty. Goes well with toasted bread. Might also squeeze some lemon juice over it next time round to add some zest.

I made this today for supper. I wasn't sure it would be so flavourful because the ingredients are pretty simple. I was pleasantly surprised. I love the flavors, but I found it a bit spicy, I will lower the amount of cayenne pepper the next time I make it. Other than my sad heat tolerance in food, this food was satisfying and felt so healthy in my system. I will add this dish to my fall rotation. Yum.

Hey Katya, thank you for sharing your insight! While our recipe is inspired by Moroccan cuisine, it's fascinating to see the similarities with the Georgian dish "Lobio." The overlap in some of the ingredients and names is interesting. In Arabic and Farsi, "Loubia" translates to "beans" - I wonder if that's also where the name Lobio originates. In any case, if you're ever interested in learning more, we often share where the inspiration for a recipe came from in the "Info" tab of a recipe, which is the tab just next to the "Directions". I hope you enjoy the stew if you try it out :)

Truly, I didn’t have a look into the “info” section. So cool that you provide us with explanations! And indeed, in Georgia it’s also a bean dish, and the name roots in Persian. It has a slightly different spice profile though, and sometimes has walnuts in it.

Oh, in Bulgaria we also have a similar recipe for the bean soup- in our country it’s called “BOB” which translates bean 😁 The difference is that it is not spicy and we put a spearmint in it. :)

Hey Anna, aw thanks for the compliment! A 400g tin typically contains around 2 cups of diced tomatoes, which is equivalent to about 2 medium tomatoes. So to swap out the 4 medium tomatoes, we'd recommend 2x 400g tins. To play it safe, you could also start with adding less, then adding more to taste. Let us know how it goes if you try it out, and enjoy!
