Directions
- To a large pot on medium-high heat, add the oil. When hot, add the onion and sauté until golden, about 5 minutes.
- Add in the remaining ingredients. Bring to a boil and then reduce to a simmer. Partially cover with a lid and cook for 15 minutes, or until the lentils and potato are cooked through.
- Taste test, adding more salt and pepper if desired and add more water depending on how you like the consistency of your soup.
- Serve with yogurt, bread, and any other desired toppings. Enjoy!

I loved this recipe! I added a green chili in this to add some more spice.
Also, I’m quite slow at chopping veggies so this recipe actually took me an hour but it was worth it.
Quite bland indeed, lentils are way overcooked and potatoes still raw although I cut them in very small cubes and cooked over 20mins.. disappointing 🫠
Even though I spiced it up to make it more Curry-like, this was sadly quite bland. I also struggle with the fact that this is less than 1 potato per serving. I know lentils are quite nutricious but they are definitely not filling enough for me to feel happy and satiated after this meal.

Loved this recipe! I double-downed on the garlic by adding 3 large freshly minced cloves in addition to half the powdered amount. I omitted salt, but used 2 tsp of Wegman’s Organic Chicken Bone Broth concentrate. I, too, doubled the potato and cut larger chunks. (Needed 1 additional cup of water because of the extra potato.) Lastly, I added 14oz cooked, rinsed, no salt added garbanzo beans and 1.5 tsp crushed red pepper at the end. Absolutely divine! Can’t wait to try more of your veggie soups and stews! Thank you!
Loved the soup, I added some kale! I think next time I may do minced garlic instead of powder and add an extra potato. My husband says the caramelized onions on top were perfect!
Great and easy
Like all fab recipes, you make it your own with a little tweek. I have 1 stock cube, minced garlic instead of powdered. Add chilli flakes and loads of kale. Best soup ever!!
Really good! For me it turned out a bit too salty so I'll use less bouillon cubes next time (mine were the 1 cube per 0.5L type) but otherwise delicious! It also reheats well after being frozen.

Okay honestly I wasn’t expecting that much from this as the recipe sounds so super simple. But Oh my goodness was this delicious 😍😋😋😋 I used 4 small potatoes instead of 1 medium one for more substance and me and my husband both absolutely loved this. To be honest, I used this recipe as inspiration to make my own. I also added spinach, curry powder and coconut cream. Topped with crushed walnuts, a bit more cream, fresh cilantro and a squeeze of lemon. It turned out absolutely amazing!!

I removed the oil and added 1/2 tbp cumin powder (lentils love cumin)and 1 tbs turmeric (otherwise, what's the point of the blackpepper?).
My kids couldn't get enough of it!!!! KIDS + LENTILS, not the easiest! Easy, fast, delicious.

Only, both my partner and I woke up in the middle of the night with a tummy ache from lentil overload 😅 any tips and tricks on how to make them easier to digest in this particular recipe? (Family tradition calls for caraway seeds but I can't see that working well with this flavour profile ... 🫣)

I find that paprika really doesn’t taste like anything, but then I think maybe I’m buying the wrong paprika. What kind do you use? Should I try getting a Hungarian paprika to try instead? Or go with a smoked paprika?

I made this for the 2nd time today! So easy and delicious… and easy to modify. The first time I made it, I added spinach, lemon and served with homemade soy yogurt. Yum!
This time, I added cooked chickpeas and chopped chives from my garden. Really good, but I do like it better with the yogurt. I will definitely make this a lot this Fall/Winter.
Oh, I made it both times in my Instant Pot. Sautéed the onions, then added everything else. Set on “pressure cook” for 5 minutes. Went on a long walk, then when I got back, lunch was ready!

This soup was so comforting and easy to make! 🥹 Added some carrot and spinach too. I might have used the wrong potato/lentils, because the soup never got a creamy consistency, only the “stock” with pieces of potato, carrot & lentils. I didn’t love the hint of sourness that the balsamic vinegar added so I balanced out with some honey. I also added a tiiny bit of cumin and cinnamon, which made it feel sooo autumn-y and cozy. Recommend!!! 😍

I made this today with the addition of 2 cloves fresh garlic, 1/2 tsp each of cumin, turmeric and pepper flakes. I omitted the balsamic vinegar bcz i wasn't sure how that would affect the overall flavour. I used ghee instead of vegetable oil bcz its just better for you! We loved it! Had it with quinoa on the side.
We used to eat red lentil soup pureed with a grated potato and a grated carrot (a recipe from my Turkish father in law).
But this recipe feels even more wholesome and filling and is even easier and quicker to make. We will definitely cook this more often now :)

This soup is delicious! Mine came out looking very washed out, not the color in the photo, but it tastes so good. I diced the potatoes a bit large so they took too long to cook, and the lentils ended up overcooked but the texture is still enjoyable. So easy to make. It will be added to my rotation!

This is a winner! I just made it for lunch and it is delicious. I'm not generally a soup person and vegetarian recipes don't usually appeal to me, but this soup has blown my mind. If I came home from a long, hard day out in the cold, this soup would satisfy me. I did add a little bit of smoked paprika as well, because smoked paprika. I put a little dollop of light sour cream on top and I haven't even finished this bowl and am already considering seconds. Well worth making.
I made this soup feeling confident in the photos of the soup but it really fell short. Maybe I doubled it wrong but I used the site to make 6 servings but it was watery but worse was just flavorless like little flavor profile. I had to doctor it up with other spices to want to eat it.

Amazing flavour of the garlic, chillis and onions. Brings a fresh memory of a mix of italian, arabian and lebanese. Though, i would say that 4 cups of water is way too less as it basically makes the whole soup like a thick gravy so for the ones planning to make this for your family, use 6-7 cups of the water you used to rinse your lentils and then cook it as it also takes time to boil. Also, add some smoked chillis (freshly made) to add a better flavour. I tried it and its something to cherish and you would literally dream to make it again.

I am genuinely surprised with how flavorful this simple soup was! I made it with sweet potatoes, and it was superb. The caramelized onions are a MUST-- it adds so much and requires little prep. I served it hot with lightly-toasted sourdough bread. It's really nice to have a recipe that can please so many palettes. As someone who's learning how to cook/enjoy lentils, this was a great introduction.

I made this today for lunch it came together so quickly and was really delicious. Love this recipe. I often have leftover potatoes that are about to go bad, I make a lot of this soup and freeze the portions i dont eat right away. Very easy to warm up again and most importantly tasty and quick. I love the simplicity of this recipe aswell as how little time it takes up and how good it tastes. The most perfect comforting soup for fall. I made this because I happened to have every single ingredient already, and needed to use them up. Also added carrots and frozen spinach and they went so well with the rest of the ingredients. The last month I have been making exclusively PUL recipes, and not a single one has disappointed.

This is a heart-warming, satisfying comfort food on this rainy Winter's evening! I may have added too much water so the soup took a little longer to thicken up but the end result was beautiful and creamy. Super delicious with a dollop of yoghurt on top. I served this with pieces of roasted kumara (golden sweet potato) and topped with parsley.
With so little ingredients I was afraid this soup would be too plain, but it’s bursting with flavor! The recommended yogurt on top was awesome, too! I will be making this recipe very often.

Incredible!! The spices give the recipe such a warm taste and the texture of the lentils is so different from what I usually know in a soup (potatoes, carrots and such). I really loved it! And it goes so well with a cold and dark weather :3
So easy to make and delicious! Usually make it with sweet potatoes instead of potatoes. Also, appreciate it when you indicate recipes freeze well like this soup as freezing half the recipe for another day makes meal prep easy.

This is delicious and so easy to make! It's going in my regular recipe rotation. I made enough for a couple of days, and a serving for the freezer. Today, I put it over a bed of fresh spinach and to switch it up tomorrow, I'll put it over a bed of steamed cauliflower. YUM :)

Really fantastic "go-to" for a quick, easy, budget-friendly (most ingredients are things you likely already have), and delicious weeknight meal! The combination of potatoes and paprika reminded me a lot of some great dishes out of Spain, if you're a fan of those flavorings!

I love this lentil soup, it has become a staple for me in the last few months. Simple ingredients, but so flavourful - I love it!
I also made so many different toppings with it - today I used up some stale bread and made simple croutons (with lots of herbs).

Made this today - it's-25C here in Ontario. Perfect dinner on a cold day. I added some chopped kale that needed to be used up, along with 2 sliced Beyond sausages. We ate it with foccacia "fingers ". I will definitely make this again. And again 🙂

WOW. I was just making this for lunches for a week, now this has become a household favorite! I think it is the balsamic vinegar addition! The actual soupy part is incredible! I added Pak Choy and Red cabbage towards the end to save them from going off in our fridge. That was a great addition if anyone wants to try!

Picked this recipe for several reasons: pantry-friendly, your recipes earned my trust when your Spicy Garlic Tofu got me past my FOT (fear of tofu), and near-zero effort/mess! I had some bits of frozen chopped okra and baby peas, so I added those to tidy up tue freezer. Super delicious, healthful and perfect on a lazy, chilly day. Thank you for this keeper.

This soup is incredible. While it's so simple and budget friendly, it truly doesn't lack in flavour and this yummy comfort feeling. I LOVE this soup. I added a bit of kale from my yard, cause I like to spot some green in my soups.

Made this after I saw the video today, and it is so easy and delicious! I didn't have onion powder so I just left that out and added a little more garlic. The one thing I can't figure out is why it's such a deep red in the picture, but mine turned out pale orange. I used sweet Hungarian paprika and Turkish Masoor Dal split red lentils. A keeper regardless though!
Loved this wholesome and delicious soup! I used dried brown/green lentils that I soaked the night before and scallions (didn't have any onions). It's amazing that you don't need broth for this soup! I will definitely be making this again and again during the fall and winter season.
I wouldn't have thought such a simple recipe (using water instead of broth, no less) could be so tasty, but I love this stew! The only change I made was to put 1 tbsp of smoked paprika instead of the 1.5 tbsp regular paprika. Both my husband and I enjoyed it. Definitely will be making again.
This recipe is so easy and yummy! I always add extra vegetables from the fridge. Zucchini especially is my favorite to add to this soup! Sometimes I do half smoked paprika, half regular too! Any way you make it is fast, tasty and budget friendly too!
AMAZING. I just came back home and got a taste of the soup I made in the afternoon and I'm pleasantly surprised it came out THIS GOOD. I was running so I just left it in the counter to chill while I went out for 2-3hours without even trying it. I don't know why I had this feeling it was going to be bland. It's DELICIOUS and VERY filling. I did add a quarter of a red pepper that was going to go bad and a leaf of leak that was about the meet the same fate. I also accidentally let it dry a bit too much (while I was running around) but it's still great. Thick like a pure and lovely. Thank you!

This is one of my faves. It's so easy to do and tasty! Also it freezes very well. My favorite topping is sauteed onions and hot sauce.
I tried this when there basically was nothing left in the fridge and I couldn't be bothered to go shopping before having dinner. This is really comforting, smooth and delicious! It would have been better had I had some joghurt to top it off with... But I still had the leaves of some beet roots (which you can use similarly to mangold leaves) that I chopped and added 5 minutes before serving. I recommend some chopped nuts on top if you miss a crunch factor. Will defenitely make this again.
I made this and it was the best! I had a small pan though and messed up the ratio of lentils and water so it got a bit thick, which was no problem, it tasted amazing. I also added 4 grams of chilli powder. Surprised how easy and delicious this is!
