1medium onion, diced

2garlic cloves, crushed

1 tsp (2 g)curry powder

1 tsp (2 g)paprika powder

½ tspground coriander

¼ tspground turmeric

3medium potatoes, cut into 1 cm cubes

1zucchini, finely chopped

1carrot, finely chopped

2vegetable bouillon cubes

4 cups (960 mL)water
Serve with

½lemon, juiced

1½ cups (360 mL)unsweetened soy yogurt
Make your own
Directions
- Add the oil and onion to a large pot on high heat. Cook until golden, about 5 minutes. Add splashes of water as needed to deglaze the pan.
- Then add garlic and the spices, and cook for another 2 minutes.
- Add the remaining soup ingredients. Simmer, partially covered, for 15 minutes or until the lentils and potatoes are cooked.
- Optionally, for a creamier texture, use an immersion blender to purée some of the soup. Then add the lemon juice.
- Garnish as desired, serve hot and enjoy!
Storage
- Store in an airtight container in the fridge for up to 4 days.
- Store in the freezer for up to 2 months.

Very nice recipe. My friend and I agreed, though, that although we already doubled the spices, we should have even further increased the amount of spice. Also, we needed to add more salt to make it tasty. And I wish I had added a less water to make it a bit thicker. Overall, a very nice dish :)

Although I loved other similar PUL recipes to this one, this lentil soup didn't quite do it for me... The lentils weren't fully cooked even though I soaked them and let them cook for more than 20 minutes and the final texture of the soup was a bit thicker than expected. Other than that though, the dish was pretty good and I enjoyed it!

This is soooo good! it’s been snowing since 6 AM this morning and it’s almost noon so I made this for lunch because I had all the ingredients. It is so delicious I don’t like to be someone that changes somebody else’s recipe and then says it’s good, but I will admit I put a Serano pepper in there because I really like spicy.I can’t wait to share it with my daughter! When you find a good vegan recipe, you need to tell all your friends!

So easy and beyond delicious. I made a single portion and found that the spices were bland so I doubled up on it and added a dash of coconut milk as well to make it extra thick and creaming. A 40min recipes ended up being 15min and I loved it. Definitely a winner for single quick dinners
