I am not sure whether I’ve ever had a soup that tasty and satisfying. It is just the right balance of spice, salt, sweetness and heat, all combined in a silky and thick texture. I swapped the coconut milk for oat milk since it was the only dairy/cream alternative I had at home and still it turned out amazing! Thanks, PUL Team, for this great recipe! 😍

Probably my favorite soup recipe from PUL! I couldn't find parsnip, so I just swapped it for some extra carrots and a sweet potato, but it was delicious anyways! The coconut milk adds so much flavor in the end, as well as the lemon juice! I was surprised at how delicious this was and I can't wait to make it again!
