My favourite PUL soup. I keep coming back to this recipe. I like to add some extra ginger for a bit if a kick. Warming and satisfying.
Very good, kept the salt/stock cubes out until the end after I took some for my niece Flòraidh (10 months old) a bit sour for her plain but very much approved with some Greek yogurt stirred in. Me and mum very much enjoyed it too after adding the stock cubes.
C'est une très bonne soupe de tomates, mais malheureusement ce n'est pas une très bonne soupe de courges. La tomate prend le pas sur la citrouille et on ne sent plus la douceur du potiron. Au-delà de ça, la soupe demeure très bonne
Do bot skip the yogurt & chilli part! Otherwise it would be bland soup - but with these garnishes it is great soup!! 🥰
I really enjoyed this soup. I baked the pumpkin whole tomatoes garlic and onions. The turmeric and rosemary took it to the next level. Thankyou for your inspiration to something a little different
It’s so delicious 😍 I want to add it to my regular repertoire. I used dried rosemary and it works well. Also I used immersion blender and left some smaller bits of the pumpkin which adds a nice texture.
Note: I needed to cook it for 30 min, counting from adding room temperature tomatoes and water to the mix, before the pumpkin was soft enough.
Normally I don't like squash too much, but this soup is so delicious 😋😋🧡

Has to be one of my top 3 favorite soups I've made thus far! Loved using the combination of rosemary, tumeric, turmeric, and ginger. We made some of the PUL garlic naan to accompany it - wonderful!

What an easy and delicious recipe! I had a squash that needed using up and this was the perfect recipe. I toasted the squash seeds for garnish which I always love doing. And the hint of rosemary, really made it extra special/festive.
Absolutely delicious! I recommend adding sautéed mushrooms. We wanted an extra chewy factor ;)
Delicious soup! There is one possible error in the recipe as the ingredients call for butternut squash but then the instructions state cooking the pumpkin. We cooked it with a butternut squash and it was excellent.

Our family loved this soup. I put the pumpkin in the oven for 40 minutes, which made it soft and easy to use...and extra delicious! With some multigrain walnut bread....mmmmmmm!!

Absolutely delicious! The turmeric and rosemary worked well together with the butternut squash. I made the soup with some vegan grilled cheese sandwiches, and it was the perfect Autumn dinner!

Lovely soup! Really warming and spicy in a good way. I really liked the kick from the ginger and turmeric. Really satisfying! It did stain my Vitamix though 😭 I think because of the turmeric. Next time I’ll use an immersion blender haha!

Very flavourful! A fall favourite!
I find that this version of tomato soup has a lot of healing properties in it. Turmeric and ginger? Awesome. At first I did a double take on the amount of turmeric, 1/2 tablespoon seems a lot! But you only tasted it slightly, I was shocked. I have another tomato soup recipe I use that I like slightly better BUT not nearly as healing and healthy as this recipe. Will have this again for sure. Served with mini vegan sourdough grilled cheese.
So easy to make in my Vitamix and quick. Added some green onion on top. Awesome lunch
