A light and citrusy soup that uses all parts of the carrot. The leafy tops that would normally get thrown away are elevated in this recipe in the form of a crunchy topping. Also, the addition of both the juice and zest of the mandarins really makes their sweet and delicate flavour shine through!

Tried this during supper with friends since I wanted to try something new. My friends loved it so much and was amazed with flavor of orange in the soup, they thought that it is such a unique ingredient to add in a soup. I served it with fried tvp (textured veg protein) and garlic bread.

That sounds like an incredible pairing, Roanne! So glad your friends enjoyed the unique orange twist in the soup 🍊

Mandarin taste was too intense even thought I used 6 instead of 7. The mandarin zest gave bitterness
Dalia Jakubaitytė - Dec. 31, 2024, 9:11 p.m.
Is there any way I could remove the bitterness and intense taste of the mandarin?

What a good recipe to bust through a decent amount of carrots in one go. Just made it today and absolutely loved how the tastes of tangerines and carrots played with each other. Not a combo I would have imagined, but it works! Absolutely delightful and very nourishing. Thank you for such an interesting and comforting recipe ☺️

Wow wow wow. I'm not a fan of the taste of carrots which is kind of a bummer because they're so good for you. This soup was insanely yummy and had no strong carrot taste. Woohoo!

So happy to hear the soup was enjoyed, Abi! Thanks a bunch ☺️

Loved it! Just the perfect amount of sweetness- not too overpowering

This soup was very unexpected. I think it has potential even as a cold soup. Next time, I will add less mandarin juice and zest so it doesnt overwhelm the other flavors in the recipe (im guessing our madarins were really intense). I also ran out of carrots and added a half a sweet potato, which worked out well. Will serve this again as an addition to a sandwich or salad.

Thanks a bunch for sharing your experience with the soup, Tiffany 🤩

I made double portion and it was fantastic! I also put a bit less zest though. Otherwise great recipe!

Love! Only suggestion I have is to make sure you finely grate the oranges and maybe add only half of one plate as the zest may be too overpowering in your soup. Other than that it’s fantastic!

Thanks for the tip, Jackie 🙌

How much is a single serving? I’m trying to figure it out the nourishment information. Thanks 😊
PUL Team - Jan. 21, 2024, 11:49 p.m.
Hey there, Laura, if you're making the original recipe 1 serving is around a quarter of the total portion. Sometimes we list the portion size more in depth in brackets below the serving size. For example, our cranberry sauce says 1/4 cup per serving below the recipe's serving number.
We'll note down the feedback to be more precise with the serving size for recipes, such as listing the grams. One reason we don't include grams specifically is it can often vary. For example, it may be more if vegetables are larger or less if a dish simmers for longer and liquid evaporates.

I used normal oranges, just what I had on hand, works amazingly. Superb work! One of my new winter faves :)

A bit of work, but the result is very tasty! I used soy cooking cream instead of coconut milk and it tasted great. Loved all the flavor from the zest

Super tasty and interesting soup! I think next time we will skip on the zest, i found the mandarin a tad to overwhelming
Lukas - Dec. 3, 2023, 1:22 p.m.
Quite good, but the mandarin was a little too overwhelming for my taste, could hardly taste anything else - but I think that can be easily adjusted :)
PUL Team - Dec. 4, 2023, 3:46 a.m.
Hey there, Lukas, thanks for sharing your experience with the soup! We've cut back on the mandarine orange a tad - thanks for helping us improve what we do 🤗
