1large onion, diced

2garlic cloves, crushed

1 tsp (2 g)curry powder

½ tspground turmeric

¼ tspground allspice (optional)

3carrots, chopped

2medium potatoes, chopped

1½vegetable bouillon cube

4 cups (960 mL)water

Directions
- Add the oil and onion to a large pot on high heat. Cook until lightly caramelized, about 5 - 7 minutes. Add splashes of water as needed to deglaze the pot.
- Add the garlic and all the spices. Cook for another 2 minutes.
- Then add the remaining ingredients, except for the quinoa. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the potatoes have softened.
- Using an immersion blender, purée the soup to the desired consistency. If using a standing blender, we recommend blending half, so that some small chunks remain.
- Serve alongside some cooked quinoa, or with croutons. Enjoy!
Storage
- Store in an airtight container in the fridge for up to 4 days.
- Store in the freezer for up to 2 months.

I really liked this. With the spices it would be really good with sweet potato too I bet. It was easy to make as well which helps!

Super easy to make and tasted great! I tasted the potato more than the carrot, but I'm a potato lover so that was fine. The spices were not overpowering and made it comforting.

Very tasty. This soup was a family dinner success; adults thought it was delicious and the kid finished a full
bowl. I used coriander instead of garam masala, and sprinkled chopped parsley over the quinoa (as the pictures suggested something like that, and I had parsley that needed eating). I will probably try cilantro with the leftover soup (as I doubled the recipe)!
This was a good solid soup and I love the idea of quinoa as a topping 😊 next time I'll add some more different toppings to make it even more interesting 😋 it's great as a clean out the fridge or staple soup!
