1 Tbsp (15 mL)vegetable oil

1medium onion, chopped

1½vegetable bouillon cube, crushed

3 Tbsp (19 g)roti masala spice mix†

3medium potatoes, cut into 1 cm cubes

1carrot, diced

1 cup (164 g)cooked chickpeas

1 cup (240 mL)canned crushed tomatoes

1 cup (240 mL)water
-
1 cup (240 mL)canned full-fat coconut milk (optional)

2 cups (60 g)fresh spinach

1 cup (138 g)frozen green peas
Garlic tortilla
-
2 tsp (10 mL)vegetable oil
-
2garlic cloves, crushed
-
2large soft tortillas
Serves well with

Directions
- To a large pot over high heat, add the oil and onions and cook for 3 - 4 minutes. Then add the garlic and cook for another minute.
- Then add the crushed bouillon cube and masala seasoning. Cook and stir continuously for 30 - 60 seconds to allow the spices to lightly toast.
- Add the potatoes, carrots, chickpeas, tomatoes, and water. Bring to a boil.
- Reduce the heat to a simmer, cover, and cook for 20 - 25 minutes, or until the potatoes are fully cooked through. Stir periodically.
- To make the garlic tortilla, mix the oil and garlic in a small bowl. Brush the garlic oil on each side of the tortilla and toast in a large pan on medium-high heat for 1 - 2 minutes on each side, or until golden.
- When the potatoes are cooked, add the coconut milk, spinach, and peas. Cook until heated through.
- Serve the curry with the toasted garlic tortillas 'naans', or some rice if desired. Enjoy!
Notes
- †Our store-bought roti masala seasoning consists of ground coriander, turmeric, cumin, mustard, nigella, fenugreek, and pepper. If you don't have access to a similar spice blend, simply substitute out for an equal amount of curry powder.
Storage
- The curry can be kept in an airtight container in the fridge for up to 3 days, or in the freezer for up to 1 month.
- The garlic tortilla is best when enjoyed immediately.

This is absolutely divine! Don't skip the coconut milk, it really brings it to another level in my opinion. I made this to have for dinner and to take as a packed lunch for work the next days. I usually hate eating the same thing 4 times but let me tell you I can't wait to eat this tomorrow and the day after!

I’ve found that this dish takes longer to cook than is advertised to get the potatoes soft—we often have to simmer it for about an hour. No big deal though if we start prepping dinner early enough! This curry is super delicious and is a fantastic vegan option. My husband and I love to add a can of pineapple tidbits in for a little extra sweetness 🤫

I found it delish! I served with rice and the fake naan went down well with my kids. I didn’t have roti masala so I actually made my own from the spices mentioned. I just toasted the whole seeds in a small frying pan and then ground them. I think it elevated the flavour a lot

Really Delicious!! I skipped the garlic bread, added ripe mango as a sidedish and used Garam Masala because that was in the house.
I had to substitute madras curry for the roti masala but it still turned out great!
It definitely is very tasty as it is but I chose to add some more spices to it in the end. That is of course because I have them in the pantry anyways. I added a lime leaf, a peace of star anise and some curryleafs.

Delicious as is, and I’m also thinking of trying it with the coconut milk subbed out for another plant-based milk for a less coconut-ey flavor, just to switch it up.
There’s something about this curry, (minus the coconut flavor) that reminds me a lot of Japanese curry.
It must be the potatoes, carrots, onion, and peas (I always put peas in my Japanese curry).

really really good! even though I accidentally used a whole can of coconut milk and one of chopped tomatoes......was still extremely tasty albeit liquidy. I served with rice and parathas.
Used kale instead of spinach and it tasted great! Feel like I underestimated how much flavour this would have - yum yum yum! Such a great way to get veggies and greens in, and so versatile to have with rice or chappati 😍
Hi can we use frozen vegetables instead for this? Will be traveling but I definitely want to make this. Also- if there’s no access to roti masala is it just curry powder that you need or would you recommend additional spices?

I am at the beginning of my plant based journey and this is my first PUL recipe. It was SO GOOD. After adding the optional cup of coconut milk, I thought the dish needed a little more salt so I added a 1/2 teaspoon - perfection. This is one of the those recipes that gets even more delicious over time as the flavors meld together. It was so satiating that I didn’t feel as though I needed my after dinner sweet - my taste buds were satisfied. I'm confused by the coconut milk being optional. It wasn't referenced as optional in the video, and i'd imagine leaving it out would make quite a difference. If you leave it out, would you replace it with water? another milk? broth? or nothing at all? But I LOVE your channel and have enjoyed everything I've made so far and the non recipe vids too.

Hello ! Is roti masala la the same as garam masala ? 3 tables spoon is really spicy even with coconut milk and I was wondering if I have the right spice. I loooove it with curri but I like to have different flavor curri that is why I try it with the masala mix.
Other then curri or masala , la there other spice mix option tu change the flavor ?

This was a really good hearty meal. If you can provide the portions for roti masala seasoning I can ground the mix myself. I happen to have all the ingredients in my kitchen and took a guess at the proportions and used curry powder also.

This dish is a keeper! I made this today for my family and they absolutely loved it! Hello! I was just wondering if "roti masala" seasoning and "garam masala" are the same thing? When researching Roti specifically I could not find if it was just another name for garam or not. I have both garam masala and curry powder on hand always, so was wondering which is the closest alternative? Thanks so much!

I definitely want to try this. I have been getting more into trying foods with curry. I have been also trying to freeze more food to help save some time in the kitchen.
Questions:
1. I have heard that potatoes don't freeze well because the potatoes will get gritty. Have you experienced this? I noticed that this is a freezer friendly meal and definitely want to try to freeze.
2. Can I substitute tomato powder for Tyr tomatoes in this recipe?
Me and my boyfriend were looking to start adding some vegetarian options to our weekly food. This was first fully vegetarian meal that we made. It tasted AMAZING. OK so I did the 1 serving recipe, but with 2 medium potatoes instead of 1 (cause I love em), and curry instead of the roti, also didnt do the tortillas... BUT STILL I LOVED IT. Firstly cause it was TOO simple to cook, and not only that, but the fact that it makes you feel full easily made my curry last for 3 meals instead of just one !!! (Served with rice). So with very little amount of ingredients I ate 3 times, and very lil amount of time spent cooking. Thanks Sadia! Your recipes save students like me who dont even have an oven XD

By far, this was the most delicious curry I've ever made. Usually a homemade curry lacks flavor for me. Probably because there isn't a gallon of ghee added in. This one was so flavorful I cleaned my plate! Looking forward to leftovers tomorrow, too.

I've made a bunch of curries from this site within the past year and they never disappoint - but I will say, for this recipe the tortillas were a highlight! Love this recipe. Wasn't able to serve it with the garlic tortilla since I just had to snack all the time while cooking the Curry. It was tooooooooo tasty together :D Freezed some for later as well.
This was so easy to make and tastes SO GOOD. Used some random curry paste I had in the fridge and added lentils as well.
The potato needed way longer to cook though (1cm cubes!) but I think it's because I used a pan with no lid.
This was a delicious curry: tangy, sweet, savory! We ended up grinding our own roti masala by using the spices listed in the description, in equal proportions (slightly heavier on the cumin and coriander), and it was delicious. The potatoes did take a bit longer than 15 minutes to cook: it was about 30 minutes for us. But it was still a fairly quick process overall. The crispy garlic naan pieces were my favorite! Definitely making this again.

Made this recipe for my parents and partner two nights ago and it was a hit. Trying to show them how delicious a plant based lifestyle can be! Made this for my non plant-based fiancé and he loved it! I was surprised that he didn’t notice the chickpeas, as he doesn’t branch out with his eating often. I added the optional coconut milk and it was wonderful served with some rice. Definitely will make again!
This recipe was sounding so comforting that I had to make it in my next meal after I watched the video. Replaced chickpea with chana dal and skipped adding peas because of my hurry to try it out. I bought the ingredients for everything from this video. This is the first recipe I have tried and it is incredible! I made it in my instant pot, for 15 minutes, as I only had dried garbanzo beans that had been soaked, but needed to be cooked. I added the coconut milk, spinach, and frozen peas at the end. I cannot thank you enough! I have already shared this recipe with my mother and mother-in-love.
Awesome recipe, i've replaced the rice by semolina with oil and an extra bouillon cube and it's awesome ! Also, I prefer to put less potatoes, chickpeas and less spinach and peas. Coconut milk really makes the difference !

This was a little spicier than I normally like, but very tasty. The potatoes took way longer to cook even though I cut them pretty small. I had to add a bit more tomatoes and water to help potatoes cook thoroughly.
Love this weekly menu but I'm finding with vegan and veggie eating that it's so carb heavy. My body does not do well with a lot of carbs -- I'm older (post menopause) and gain weight just looking at a carb. I work out regularly, both cardio and weight lifting. Do you have meal plans that don't include so many carbs?
And I will say how happy I am I stumbled upon your site!
Love this! I was able to use a lot of fresh produce from our vegetable garden, so this was ideal! I just love how simple ingredients can yield such delicious results. I even made my own vegetable broth instead of using a cube. Additionally, my partner can't believe how many meatless days we've been having since I started following your channel. To put things into perspective - he's German and I'm Dutch-Canadian and we both grew up on...well all of those Northern European "meatfull" foods. It's huge to be able to reduce our impact and eat more vegetables. I recall that there was an ebook available at one point in time...is that still available?
I love the concept of the five recipes, with one shopping list! This makes it great to plan ahead for a week and reduces foodwaste which is awesome! We will try this definetly at home. I am prepping for the first week with a newborn and I love the fact that your new website shows freezer friendly recipes.
