1 cup (200 g)uncooked white rice, rinsed

½ Tbsp (7 mL)vegetable oil

1medium onion, diced

2garlic cloves, crushed

1medium sweet potato, peeled, cut into 1 cm cubes

1⅔ cups (399 mL)canned full-fat coconut milk

1¼ cups (205 g)cooked chickpeas

⅓ cup (80 mL)water

2 cups (60 g)fresh spinach

Directions
- Cook the rice according to the package instructions.
- Add the oil and onion to a large pot on high heat. Cook for 3 minutes.
- Add the garlic and sauté until fragrant, about 1 minute.
- Add the curry paste, and mash into the garlic and onion mixture until fragrant, about 30 seconds.
- Then add the sweet potato, coconut milk, chickpeas, and water*.
- Bring to a boil, then reduce to a simmer. Cook for 10 - 15 minutes, partially covered, until the sweet potatoes are cooked.
- Remove from heat and add the spinach, stirring to wilt.
- Serve over rice or with naan, and enjoy!
Notes
- * Taste test after adding the water. Depending on how thick you like your curry, you may want to add more water to thin it out.

Is Thai green curry spicy?
Thai green curry recipes usually have a medium spice level, depending on how much green curry paste you use. It adds a nice kick, but you can adjust the heat to your taste! Just use less paste or mix in a bit more coconut milk to tone it down.
What vegetables usually go in green curry?
Veggies in green curry recipes often include sweet potatoes, bell peppers, zucchini, eggplant, and fresh spinach. You can customize the curry recipe with seasonal veggies or whatever you have on hand though! For example, some alternatives include broccoli, carrots, cauliflower, peas, chard or peas.
Can I freeze this recipe?
We haven't tried freezing the curry with sweet potatoes since the potatoes tend to lose their shape after defrosting. You could likely still freeze the curry, and the taste should remain delicious though! For the best results, allow the dish to cool completely, then transfer it to an airtight container and freeze it for up to a few months. When you're ready to enjoy it, you can reheat it on the stove or in the microwave.

I wasn't very confident at first as I had never made any dish like that one but it was actually very easy! We added some leftover pumpkin at the same time as the sweet potato and it cooked great! We served with rice and naan breads. I'll make it again for sure! It is spicy and not burning, we both loved it!

I could eat this everyday. Even though I was too lazy to go to the store to buy coconut milk, using almond milk instead, this turned out insanely delicious. I used store bought curry paste and recommend to others to amp it up with some grated ginger and lime garnish if you have it.
