2vegetable bouillon cubes, crushed

2½ cups (410 g)cooked chickpeas

¾ cup (150 g)uncooked white rice, rinsed

¼ tspsalt, plus more to taste

¼ tspground black pepper, plus more to taste
Tortilla chips

4large soft tortillas

1 Tbsp (15 mL)vegetable oil

½ tspsalt
-
⅛ tspground black pepper
Optional garnish

Directions
- Add the oil, onion and garlic to a large pot over medium-high heat. Cook for 2 - 3 minutes, or until translucent.
- Add the tomatoes and burrito spice mix. Cook for another 2 minutes, stirring often. Then add in the remaining soup ingredients.
- Bring the soup to a simmer and cook uncovered for 15 - 20 minutes, or until the rice is fully cooked.
- Line two baking trays and preheat the oven to 390°F (200°C)*.
- Cut each tortilla into 12 pieces and transfer the pieces to a large bowl. Pour the oil, salt, and pepper over the tortillas. Toss and massage with your hands to coat.
- Lay the pieces in a single layer over the baking trays*.
- Bake in the oven on the middle and lowest rack for 3 - 4 minutes. Then flip the tortillas over and return to the oven to bake for another 3 - 4 minutes. Remove from the oven when the edges of the chips are toasted. Keep an eye on them during baking because they can easily over toast.
- When the soup is done, serve with the baked tortilla chips. Enjoy!
Notes
- * We used top and bottom heating (not fan-assisted/convection).
- ** Crowding all the pitas onto one tray can cause the chips to steam rather than roast, which might prevent them from getting crispy.

- The soup can be stored in an airtight container in the fridge for up to 4 days.
- The tortilla chips can be stored in a container on the counter for up to 2 days.

Turned out too watery, but I seem to be the only commenter with this problem. Maybe the type of rice made a difference?
Made this soup for lunch and it was quick to prepare. The spices were the right balance and I even used the spice mix presented on this website. I added some sundried tomatoes to the mix. Overall, this is a great soup and I will be making it again.
Using brown rice instead of white, this was still a success. I doubled the amount of chickpeas for more protein and fiber, which was no issue.

I would say the flavor : effort required ratio is pretty high! This packs a lot of flavor for very little effort. I will definitely be keeping this for lazy days.

This is something I normally wouldn’t make because I’m usually not a fan of soups with any sort of tomatoes, but my fiancée really wanted to try it, and we both ended up loving it! The flavors were extremely good and I loved the texture of the rice with the chickpeas. I will definitely make this again.

Great recipe and so quick and easy to make! I used kidney beans, which also worked very well, and I didn't have a spice mix, so I just improvised with chili, paprika and cumin powder, which ended up being very tasty!
My teens prefer this to traditional Tortilla Soup! 1 leans vegetarian, the other is an omniore.

Wow!! I just made this with smoked tofu because I ran out of chickpeas yesterday, I also added in some spinach and added some vegan sour cream on top - it was divine! The flavors are on point (I added some ground coriander to all the other Mexican spices), the lemon juice was a lovely addition and the tortilla chips are to die for. I added some paprika powder to them as well and now I want to make crunchy tortilla chips with different spice variations to go with pretty much anything haha. I was able to use a ton of stuff I already had in my fridge and pantry for this and it was so delicious and customizable. For sure going in my regular rotation.
Ok, this comforting dish was absolutely delicious! The rice and garbanzo bean combination was brilliant! Used taco seasoning and a squeeze of lemon to take it to a new level of WOW! Will definitely make again.

I recommand to check very regularly the tortillas in the oven, because they can turn from perfect to carbon very fast. 😅 (It might also depend on the oven, I noticed that with mine I usually have to reduce the cooking time.)

Hi ! Can I freeze the soup ? Also if I want to add leftover veggie ( corn, celery, carrot...) should I use less rice/chickpeas?
Finaly my veggie broth if powder form 1tsp for 2 cups water. Is it the same as 1 bouillon cube ? Merci Sadia. Love your receipe, your youtube video and web site.

As an Erasmus student on a budget, I must have made this soup about 5 times last semester and I wanted to come back here to say how delicious it is ! So comforting, quick and easy. There's nothing not to like about it. Out of the budget recipes video, this is the one I made the most. The tortillas and lemon really add an extra spark to this already lovely soup.

Tried making this soup a couple of month ago and it’s become a favourite! I thought it was a bit of a weird combo but O.M.G, it’s just lovely! The only thing I sometimes change is halving the amount of rice as I it becomes more soupie, but that’s a personal preference obviously. Hi there! I have a question: why are the meal soups not freezable?
Made this tonight and it was delicious. I used one cup less of water to make it more like a casserole than a soup (to suit my toddler who hasn't quite got the hang of spoons yet) and it turned out just right. Thanks for a lovely recipe!
I followed the recipe exactly and it yielded a delicious, filling, healthy soup.
This was so delicious, cheap and took less than 20 minutes to prepare! For us, it was more like 5-6 servings, which only made it even cheaper!
As we are only two people, we saved our leftovers and ate it for lunch for the next two days. Next time, I will cook the rice separately and mix it in just before eating - because overnight the rice soaked most of the liquid and became a bit mushy.
Looking forward to try the rest of the budget meal plan!

I made this today and I am so glad that I did! It is so delicious! At first I was a bit reluctant to make soup as it is still 'summer' but the temperatures here are not high at all and I was too tempted. Yummy, filling and easy!
This was one of my favourite dishes from the vegan budget challenge! It was so simple and delicious and those tortilla chips really made it! I used fusilli pasta instead of rice and added some cheese to it at the end as we're not vegan, and I cooked the chips for only about 7 minutes total until they were just golden, and my husband and I loved it. Will definitely be adding this to the regular rotation!

Made this for dinner, it is so delicious! I used half black beans, half chickpeas, because that's what we had on hand, and it came out really well! I also added some carrot for some extra veg which was lovely. Thank you for this ultra budget friendly meal, I am looking forward to trying more! <3

Super easy, simple and delicious!!! For my family we pretty much have all of these ingredients as staples in our pantry which makes this the perfect meal for when we haven't gone grocery shopping in awhile. I loved the idea of using prepackaged spice blends to add multiple spices at the same time, don't know why I never thought of that before, thanks for the tip!! Again, it's super yummy for being so easy, it doesn't get much better than that!
Delicious Sadia! Just made it for myself & my partner and we loved it! He is Dutch, survives off cheese+bread and dislikes all legumes...so needless to say, I was a bit worried. He not only asked for seconds but requested I make it again regularly! So happy I finally got him to eat chickpeas (all thanks to you!)
The combination of the bouillon + spice mix gives it so much flavor. I sautéed a chopped carrot along with the onions & garlic for some extra veggies and sweetness. Also topped off our bowls with a little bit of shredded vegan cheese & cilantro (& the tortillas of course), + some spinach for myself.
