I had a question! I noticed how the storage instructions for this is just a couple days in the fridge, and no option to freeze. I know some other very similar PUL recipes(like the frozen breakfast burritos and fluotas I believe(?)) say they can be stored in the freezer for quite some time.
Based on what was this decided, and how can I figure this out for myself when I see a recipe? Being able to freeze meals is key to making home-cooking more accessible to us, so any responses would be very helpful! 🤗

We focus on fridge storage for this quesadilla recipe since mushrooms can change texture when frozen, whereas generally, meals with denser fillings (like the burritos and flautas) freeze well. Beans, grains, and firm veggies, usually reheat with minimal changes in texture 😊

Hey Katrina, to make this less-spicy, you can leave out the chipotle adobo sauce from both the quesadilla and the dipping sauce. You could use a mild tomato sauce or a squeeze of lime for flavour if needed to taste. You can also add less of the Mexican spice mix, or look for a mix without chili powder 😊

Hey Shilpi, here in the Netherlands, it's in a jar called "chipotle sauce" at our local grocery store but it most similarly resembles adobo sauce if you're based in the US. Ours is made from a blend of chipotle peppers with water, tomato, vinegar, and spices (no mayo in the ingredients). You can also substitute chipotle adobo sauce for a hot sauce such as Sriracha or Tabasco 🙂
