This vibrant salad bursts with colour and nutrients, featuring a creamy, slightly spicy yogurt sauce and filling butter beans coated with breadcrumbs and spices. To enhance its visual appeal, yellow cherry tomatoes are added, though any variety can be substituted. Made this for dinner and how surprising! All the flavors paired really well together and was a great accompaniment to tortilla chips. I'll be making this again!

SO GOOD! Will definitely be making this all spring and summer.
Traficote - Feb. 20, 2025, 12:38 p.m.
Absolutely delicious and very surprising! Made this for guests, and twice since just for me and my family. It was spicy and refreshing at the same time, and those who didn't use to like beans loved them this time! Cilantro is more problematic for some, so once I swaped it for parsley, it worked a charm! Won't forget this one for sure!

Woohoo! So glad it was enjoyed, Traficote 🤗

I left out the spicy ingredients (I don’t care for heat) and swapped cilantro for parsley. It still turned out very delicious. I‘ll definitely be making it again.

Hi! If I wanted to make this but have the soapy cilantro issue, is there an herb you’d recommend in its place?
PUL Team - Dec. 13, 2024, 2:26 p.m.
Hey Maureen, we imagine you could swap it out in the yogurt spinach sauce with fresh parsley, mint, or even a mix of both. These substitutions will keep the vibrant flavour without a soapy taste 🙌

o “Heyya” f - Sept. 18, 2024, 1:03 a.m.
I'm curious , but why use a whole tomato along with cherry tomatoes?
PUL Team - Sept. 18, 2024, 6:02 p.m.
Hi Heyya! The whole tomatoes provide a juicier, chunkier texture, while the cherry tomatoes add sweetness and fun size. We love the balance of flavour and texture in the salad from both, but you could use just one if you prefer 🤗
Johanna - Aug. 30, 2024, 11:29 p.m.
summery, beautiful and very tasty! I’m definitely gonna make this again while tomatoes are still in season
Alisa - Aug. 26, 2024, 7:59 a.m.
This was such an interesting one! Quite easy to make, the yogurt sauce was so flavourful. My tomatoes were not great (your usual grocery store ones), so I fried them up with some herbs and spices. Would probably be good on their own if you have seasonal ripe tomatoes. Thanks for coming up with these creative recipes!
PUL Team - Aug. 26, 2024, 2:15 p.m.
Happy to hear it was enjoyed, Alisa! We're excited to enjoy more delicious adventures together 🫶

Omg, this looks like a chef étoilé’s recipe , for real! Might just have convinced me to finally give beans another try after years ..!

Ooo let us know if you give the recipe a try, Alice! 😎
