Loved it! Rice, beans, veg, spices, what's not to like! Super easy to make, but my oven dish is having a good soak 😜 I wrapped this in a tortilla with some pickled red onions, avocado, jalapenos and hot sauce. It's great for an after work meal as the prep is very minimal and the oven does all the work. I'll be having the leftovers for breakfast tomorrow! Next time, I'll remember to buy coriander to add to the wrap, as I bet that will be even tastier!

The taste was great! But my rice took waay longer to cook and was to wet and muchie at the end… I don’t know if I did something wrong. I did use the correct measurements.

Hey Linsey, thanks for trying the recipe and sharing your experience with it. If the rice turned out mushy, it might have absorbed too much liquid. Different brands of rice can sometimes require a bit of a difference in the amount of liquid. It sounds like perhaps too much water was added for the type of rice used. You could try reducing the amount of water by a half or quarter cup if you give the recipe a try 🙂

Hey there, Lois! The tricky thing with using another grain is the cooking time and water ratios differ, and without testing it ourselves first, I can't say for sure how it'll work out. I suspect quinoa might be your best bet, just be sure to adjust the cooking time if needed. Let us know how it goes if you give any substitutions a try 🤗

Loved this easy way to enjoy Mexican flavours. I don’t like soy yoghurt, so just topped the stew with lime juice and zest, coriander, avocado, and some vegan sour cream that I had. Delicious!

Hey Soumya, apologies for the confusion. We've just double-checked, and we only used a ¼ tsp salt for the whole recipe (in the yogurt). There's already salt in the bouillon cube that's added to the tray so we chose not to add more. You're welcome to add more to taste if you think the tray bake needs it though 😊

Loved this recipe! Very nice, I also made the soya yoghurt with cilantro. I made it for 2 persons, but then I had a lot of open cans with leftovers. So I decided to use the leftover ingredients to make a chili, added some more mixed beans and left out the rice. It’s now in my freezer to enjoy another time.

Hey CEH, here in the Netherlands it's in a bottle called "chipotle sauce" but it most similarly resembles adobo sauce if you're based in the US. It's simply made from a blend of chipotle peppers with water, tomato, vinegar, and spices (no mayo in the ingredients as can commonly be found with chipotle sauce).😊 I hope this helps!
