Fajita filling

1 Tbsp (15 mL)vegetable oil

1medium onion, finely chopped

3garlic cloves, thinly sliced

½ tspsalt

3bell peppers, sliced†

1½ cups (252 g)mock "chicken" pieces, torn into shreds

2 tsp (4 g)ground cumin

1 tsp (1 g)dried oregano
-
1 tsp (2 g)paprika powder
-
½ tspchili powder
-
¼ tspground black pepper

12small soft tortillas
Toppings
-
1avocado, sliced
-
½ cup (35 g)shredded red cabbage (optional)

1lime, cut into wedges
Make your own
Directions
- Add the oil, onion, garlic, and salt to a sauté pan on medium-high heat. Cook for 4 - 5 minutes, or until golden.
- Then add the bell peppers, mock "chicken", and spices. Cook for 5 minutes. Add a splash of water as needed to deglaze the pan.
- Meanwhile, heat a separate large pan on medium-high heat. Toast a single tortilla at time, for a few seconds on each side, until golden.
- Returning to the fajita mixture, add the chipotle sauce*. Cook for an extra 2 minutes.
- Assemble the fajitas with the bell pepper mixture and your desired toppings. Squeeze some fresh lime juice over top, and enjoy!
Notes
- †We used all red bell peppers, though any colour will do.
- * The chipotle sauce is spicy, so add less if you'd prefer less heat.

Simple and fresh - the chipotle really takes it to the next level.
This is a weekly dinner for us. I can't believe the simplicity and yet the mix of flavors. Has also been a huge hit at many of our dinner parties. I usually use hard tacos as my daughter likes that. And have done variations with tempeh, Black beans, mock chicken or whatever other form of protein I can find. Thank you!

This was yummy. Although with my substitutions of black beans and roasted lions mane mushrooms it wasn’t as bright in color. Also, I think the bell peppers here in the US can be humongous that throws off the proportions a bit.
In the end we enjoyed it a lot and I’ll make it again.

I've made this a few times now as it's so easy and quick to prepare. It's perfect for a healthy dinner, but still feels quite indulgent and a bit of a treat. I can never find the chipotle in adobo sauce locally, so I use a teaspoon of chipotle paste instead.

This has officially become one of my favorite meal prep recipes. I make this every week without fail, as it is so easy to put together and I love the macros for it too (i.e if you are trying to maintain a calorie deficit). It's so flavourful and the spices really set it after one day of refrigeration. Additionally, this recipe works with any kind of protein. I have substituted the protein for tofu, tempeh, chicken, and shrimp. It definitely tastes the best with either the mock chicken or the actual chicken. Overall, I def recommend giving this recipe a try, 10/10.

We just ate this for dinner! Delicious & very quick to make. I haven’t been able to find the chipotle sauce so we just used our salsa. We added fresh corn & olives for toppings! Yummy 😋
Simple and very tasty! I must admit I'm not a vegan, and only starting to be vegetarian. This site, the channel and this kind of recipes help so much. Hope I won't be judged for saying it, only doing so because I think if people in the same situation think "oh, it's vegan, it's not for me", they're wrong, and maybe my comment will encourage them to try like I did :)
Absolutely delicious! We were caught out with the chipotle in adobo as it was SO SPICY!! Would recommend adding much less of this to start with and then adding more as you like it. I know she even says this in the recipe, but just to reiterate, go easy at first. Loved the flavours :)
Easy steps to upgrade an easy recipe!
This was a perfect and EASY friday night dinner after a long, long week, full of flavor and spice! I ended up having to half the amount of vegetables because of the size of the pan but kept the original amt for the spices (suffice to say.....they were /pretty/ hot). For any of my last-minute scroungers, greek yoghurt worked just as well a coolant as sour cream! Of course, it didnt have the kick that sour cream does but definitely helped with the spices. Loved this recipe, I'm sure this will go into my recipe roster :)

So good! I probably shouldn’t leave a review every time we make these, but they’re easy and so delicious. We leave out the chipotle because they’re too spicy for us, and add an extra bell pepper so we have plenty of leftovers for tomorrow.

Loved this recipe! I've added thinly sliced aubergine and courgette to it, 0.5 tsp curry powder. For garnishing I added a dollop of Greek yoghurt, chia seeds, avo, mint and coriander. So yummy!

I usually avoid bell peppers, but I loved them in this recipe. And the toppings! Oh my, they make such a difference. Don't skip the lime, coriander and avocado! I swapped out the vegan mock chicken for vegan mock ground beef & it tasted great. This dish is such a wonderful blend of spice and freshness and is also super healthy with all those vegetables. Please give it a try!
This was a great dish! I definitely under estimated the spice and added a full tsp of chili powder and dang they were spicy 🔥 but very very good! Made these while the rest of the family had shrimp tacos and they even wanted some of mine.

The flavor was good but 3 Tbsp of chipotle peppers in adobo sauce was was too spicy for me and my fam. Also, I cooked the bell peppers for probably 10 minutes to give them more caramelization.
I will be making these soon! May I ask why you slice the garlic instead of chunks? I'm very curious. :)

I managed to get my hands on some gluten free multigrain wraps for this recipe which made them extra special. 😊 I opted for lentils instead of vegan 'chicken' and chipotle paste and it tasted fantastic especially with the addition of crunchy red cabbage, salsa, avocado and lime juice. I will definitely be making these again and will probably try a mix of mushrooms and beans next time! Thank you for such a quick and delicious recipe!

I love the idea of fajitas but unfortunately I'm allergic to capsicums (bell peppers). I know it would change the flavour/texture of the dish but do you think mushrooms would work as a substitute?
