½medium head cauliflower, cut into florets

2 cups (328 g)cooked chickpeas

1medium sweet potato, peeled, thinly sliced

1red bell pepper, sliced

½ cup (120 mL)barbecue sauce

1 tsp (2 g)ground cumin
-
1 tsp (3 g)garlic powder
-
1 tsp (2 g)cayenne pepper
Assembly

½ cup (120 mL)unsweetened soy yogurt
-
¼ cup (60 mL)barbecue sauce
-
12small soft tortillas
-
1avocado, sliced
-
¼medium red onion, thinly sliced
Optional garnish

fresh cilantro
-
lime slice
Make your own
Directions
- Line a baking tray and preheat the oven to 390°F (200°C)*.
- Add all the traybake ingredients to the baking tray and mix well.
- Bake on the center rack of the preheated oven for 40 - 50 minutes, or until the veggies are tender. Stir at least once halfway.
- Meanwhile, make the yogurt sauce by mixing together the yogurt and ranch seasoning in a small bowl.
- Once the traybake is done baking, add the remaining BBQ sauce and stir to coat. Serve inside the warmed tortillas, topped with sliced avocado, onion, and the ranch sauce. Enjoy!
Notes
- * We used top and bottom heating (not fan-assisted/convection).
Storage
- The BBQ cauliflower and chickpea filling can be stored separately from the tortillas and sauce in an airtight container in the fridge for up to 4 days.
- The garlic yogurt sauce can be stored in the fridge for up to 2 days.

Love this recipe so much! Experimenting with doubling the recipe and freezing half (uncooked) for later in the month. We have a jar of the ranch mix ready to go in the spice jar. We do a vinegar based bbq sauce and it’s so good on the veggies.

Really enjoyed this dish. Easy to prep, easy to cook, easy to assemble for plating. I made a few small substitutions due to missing ingredients, used chilli powder instead of cayenne, and avocado was not ripe enough yet. Next time I think I will try with pickled onions as a topper. This is definitely going into my weekly dinner rotation

Oh man! Keeping this in my arsenal. So easy! The most timing consuming part was the prep but it still wasn’t bad. This was such a surprisingly delicious dish. Can’t wait to eat this again.

It's a solid meal, however, though I do love most PUL recipes, this was honestly not a favorite of mine and so I won't make it again. Personally, I didn't enjoy the flavor combination of cauliflower and BBQ sauce.
I unfortunately did not have any barbeque sauce as I thought, but still delicious.
I have made your tempeh taco recipe many times and now I think it is time for a variation. :) Approximately how many grams is half a cauliflower? Sorry, I find it easier to have something in grams so I can be sure the proportions are right. ;) And can I replace the chickpeas with another type of bean or perhaps tofu or tempeh?
Easy and delicious
It was pretty good but very spicy 🥵 my partner couldn't eat it for that reason 😅 also I got very bloated after eating two servings (since he didn't eat his). I recommend people to go easy on the cayenne pepper if they can't handle spicy

I was never a fan of using garnishes cuz of the leftovers, but adding the lime juice and a bit of red onion here goes such a long way so don‘t omit that people! 😆

It was really really delicious! I recommend not skipping lime and cilantro - it takes the taste to another level! Also I used pickled red onions instead of raw - it was super good!

I love the idea of this dish, I made it and the barbecue sauce with the vegetables works amazing but I discovered I really dislike ranch sauce on the whole, I've never had it before.
Are there any alternative sauces you could recommend for the dish? Also any ideas what instead of chickpeas I could use for protein?

Looks yummy and I'm planning on making it this weekend. One question though: BBQ sauce is mentioned twice in the ingredients list: 120 ml under Tray Bake and 60 ml under Assembly: do we need 120 ml for this recipe or 180 ml?

I made these tonight and they were absolutely delicious and super easy to make! I didn’t add the chickpeas and used chickpea tortillas instead and used coconut yogurt for the ranch sauce and it worked out so well. Will definitely be keeping these in the rotation!
Hello, wondering how it would turn out with frozen cauliflower? Currently they are $6 a cauliflower in Aus so frozen would be much cheaper alternative if it works! Thanks

When I select print, and choose quantities for 2 people and to show substitutions, I just get a blank cover page, the recipe photo and the ingredients. Hi, have been a fan of Sadia and P for years. I wanted to ask a question…I have recently had high blood sugars and realized chickpeas and lentils are a lot of carbs :( tofu is a low carb plant protein but is there any other ones you can think of? I love chickpeas but have to cut down.
