This took 2h, not 1 even with the help of my mom😅 the rice seemed a bit plain even with the bullion cube and miso paste, the veggie patties almost had too many spices but I guess it balances out with the rice

I made the koftas only and loved them! They worked nicely. Cooked them, as instructed, on low heat for almost 20 min!

Very nice. The koftas are very filling. The portion of butternut rice is huge. Will definitely make again (good meal for guests).

I did find the koftas soaked up a lot of oil - is there a way to reduce this?

So glad you enjoyed it, Louise! The koftas can soak up a bit of oil since chickpea flour tends to do that. We haven't tested it ourselves so we can't say with absolute confidence how they'll turn out, but next time you can try lightly brushing or spraying them with oil and baking or air-frying instead of pan-frying. It should hopefully give a similar golden exterior with less oil absorption - let us know how it goes if you try it out! ☺️

This looks so tasty! But I was wondering, is there any other way to prepare the butternut squash? I don’t own a steamer basket 🙈

Heyy Regina, thanks so much! 😊 And yes, there are totally other ways to prepare the butternut squash if you don’t have a steamer basket.

You can boil it in a pot of water for about 10 to 12 minutes until tender, or roast it for extra flavour by tossing the cubes in a little oil and baking at 400°F (200°C) for around 20 to 25 minutes. As long as the squash is nice and soft, it’ll blend well into the sauce💛

I personally steamed mine in the microwave! Put it in a microwave safe bowl, added a couple tablespoons of water, covered, and microwaved for 5 minutes.
