I really enjoyed this recipe! Since I do not like frying that much, I baked the balls in the oven, coating them with some oil before. It worked as well and they turned out pretty crunchy. Thank you for the nice and comforting recipe! 😋

I just made this and it turned out to be phenomenal! It was so warm and comforting... I've never made anything like this before but koftas are my favourite! I couldn't get Yukon gold potatoes but as per the notes, I bought the closest thing to starchy potatoes and it was great.

The shape held well and the flavours were amazing ⭐️⭐️⭐️⭐️⭐️

Unfortunately the potato balls turned to mush. I had to change the pan half way through but they did not keep their shape. I was really looking forward to this recipe.

Aww, we’re so sorry to hear this, Laura! That’s always disappointing, especially when you’ve been looking forward to the meal. It sounds like the mixture may have had a bit too much moisture. This can happen if the potatoes are still warm or soft when mashed, or if a waxy variety was used instead of a floury one. All-purpose potatoes (like Yukon Gold) or starchy ones (such as russet) work best, as they help the koftas stay firm. Waxy potatoes don’t release much starch, so they don’t bind as well and can make the mixture feel mushy.
We’ve updated the note under the potatoes to reflect this, so thank you so much for sharing your experience - it really helps us improve the recipe. If you decide to give these another try and the mixture still feels soft before cooking, you could also add a touch more cornstarch or chill it briefly before shaping. We hope you’ll give them another go, cuz they really are lovely when they come together <3

Thanks for the reply. I’ll try it with incorporating your advice. It’s possible it had something to do with the potatoes as Australia is having a bad potato harvest with minimal choice of potato varieties. For the record the sauce was amazing.
