Loved this curry! The pea tofu works really nicely in it too. After frying the tofu, I popped it in the oven to keep it warm and crisp while I made the curry.
This is really easy and there is only a bit of chopping which is great for after work. Fenugreek leaves always take me to somewhere far away, I love the smell of them, so anything with those in are a win from me! The soy cream gives this a nice indulgent feel without it being heavy. Definitely recommend trying this one!

Wow, this curry is amazing! It is so rich in bold flavours, I'm going to repeat it. I do have quite a big bag of fenugreek leaves, so I am obliged to make it more often :-)

It says on the instructions to 'rest' for 1 hour but I can't see this in the directions. I think there is a mistake with the timings. Looking forward to trying it.
