Just made this for dinner, and oh my gosh, yum! We used extra firm tofu, tore it into pieces, and fried it with avocado oil after tossing it with 3 Tbsp corn starch, 1 tsp kosher salt and cracked black pepper. And we made homemade naan instead of rice.

It seems like the portions are slightly small, but with the tofu and naan, it was just about right :) Delicious and super easy to make!

Loved this curry! The pea tofu works really nicely in it too. After frying the tofu, I popped it in the oven to keep it warm and crisp while I made the curry.

This is really easy and there is only a bit of chopping which is great for after work. Fenugreek leaves always take me to somewhere far away, I love the smell of them, so anything with those in are a win from me! The soy cream gives this a nice indulgent feel without it being heavy. Definitely recommend trying this one!

Wow, this curry is amazing! It is so rich in bold flavours, I'm going to repeat it.
I do have quite a big bag of fenugreek leaves, so I am obliged to make it more often :-)

It says on the instructions to 'rest' for 1 hour but I can't see this in the directions. I think there is a mistake with the timings.
