1 cup (200 g)uncooked basmati rice

1medium onion, finely chopped

1 Tbsp (6 g)whole cumin seeds

1 tsp (2 g)chili flakes, or less if you prefer less spicy

1 Tbsp (6 g)ground coriander

½ tspcayenne pepper

½ tspsalt

1¾ cups (420 mL)canned full-fat coconut milk
-
4½ cups (135 g)fresh spinach
-
½lemon, juiced
Seasoned tofu
-
16 oz (450 g)firm tofu, pressed, cut into 1 cm cubes
-
1 Tbsp (6 g)curry powder
-
1 Tbsp (15 mL)vegetable oil, for frying
Directions
- Cook the rice according to the package directions.
- Add the cashews to a bowl and cover with boiling water. Set aside.
- Add the tofu cubes, curry powder, and nutritional yeast to a large bowl. Toss to coat.
- Add oil to a large pan over medium-high heat. When hot, add the seasoned tofu and cook until golden on all sides. Stir periodically, but avoid over-stirring as this can break up the tofu.
- Meanwhile, add some more oil to a large pot on medium-high heat. When hot, add the onion and garlic. Cook until lightly golden.
- Then add the jalapeño, cumin seeds, and chili flakes. Cook for 2 minutes.
- Drop the heat to medium-low and add the remaining ground spices. Toast for 30 - 60 seconds, stirring throughout.
- Then add the drained cashews, coconut milk, and spinach. Cook until the spinach is wilted. Remove from the heat and let cool slightly.
- Transfer the spinach mixture to a blender. Blend until smooth, then return the mixture to the pot.
- Add some lemon juice, and the cooked tofu. Stir, and cook until everything is heated through.
- Serve with the rice or naan and garnish as desired. Enjoy!

Oh...my...god?! Why is this so delicious? So flavourful, but each ingredient and spice come through so nicely. Nutritional yeast in the tofu mix is such an unexpected boost. The dish is comforting, but spinach and lemon make it a little refreshing too. I could eat this for days!
So good! I forgot to check and my coconut milk was sweetened so that was a little off putting, but we will definitely be making this again with unsweetened coconut milk very soon!

Really delicious! Better than the palaks I’ve tried at Indian restaurants. I swapped tofu for cooked chickpeas, as the grocery store had run out of tofu, and still turned out great!

Changement apporté : utilisation de beurre de cacahuètes à la place des noix de cajou. Utilisation de pois chiches à la place du tofu (assaisonnement identiques mais pas de passage à la poêle). Rajout de jus de citron vert et de sauce de soja pour l'assaisonnement. Si pas d'épinards frais, n'importe quel légumes verts surgelés fait l'affaire

Loved this! I had to swap some of the chillies because I didn’t have cayenne or jalapeños so I used Pequín and half a green chilli. It was a little bit thick and that is why is not a 5. My non-vegan husband loved it too ☺️

This is such a tasty meal (and a dish that I’ve missed since becoming vegan) 😍 Easy to make and surprisingly filling too. Personally prefer light coconut milk over the full fat one for this recipe (have tried it both ways). This is definitely a keeper!
Delicious. I have made it probably 20 times by now. I have made some changes to fit my taste more like adding maple syrup for sweetness. But overall a great basic recipe and super quick to make.

This was absolutely delicious!! My husband and I agree it was like getting take out from the fancy Indian restaurant in our neighborhood. On top of being delicious, it was the perfect weeknight dinner: easy and nutritious!
They say never to try a new recipe when you’re having guests over but PUL never disappoints, so I took the risk and made this for some non plant based foodie friends who came over for dinner for the first time. They absolutely loved it! I’ve made tofu palak paneer before but this recipe has definitely replaced the old one in my books. I used an immersion blender because I don’t have a stand blender and it worked perfectly (plus fewer dishes).
OMG! One thing I’ve missed as a vegan is palek paneer and this totally makes up for it!

Amazing recipe and a really good way to include spinach and tofu in a dish. I don't really like tofu, but done like this, it was great. I did have to make some adjustments so I can't say 100% how the recipe here is, but I believe it would be just as good. I used frozen spinach cause that was all I had, added coriander as well because I love it, and I didn't have jalapeno, so I used a small package of thai green curry paste, but I believe that enhanced the flavour a lot. All in all, another great dish!

I loved this! Packed with flavour and just allround delicious. Would definitely make this again. The only thing I would say is that the amount of portions didn’t quite work out for me. I would say I got around 2-3 portions out of it (rather than 4 which the recipe stated). I added some more coconut milk and some water to thin it out slightly so it would serve 3-4 :)

Delicious and a hit with our toddler too. I cooked the tofu in the air fryer to speed things up and used english curry powder. I'm going to make it again using a different curry powder to see the difference in taste and heat levels. I think I might add some peas at the end next time too.

Turned out so good!! For easy cleanup, I did the tofu in the oven at 400 on parchment paper for 30 mins. I substituted white rice with brown rice. I happen to have a chili pepper in the frig — de-seeding provided a good heat.
Yum! I added some chickpeas for extra protein and cherry tomatoes for acidity. Works really well. Pick up limes ♥️

Really liked this recipe - creamy, green & tasty! Quite a few bowls and utensils are required but I fried the Tofu in a big wok pan, saved it for later and just put the rest for the curry in afterwards. World just as well!

This is absolutely fabulous! So flavorful and complex. I didn't have spinach, so I swapped it for peas to still get the green colour and added more chili flakes and lemon juice to compensate for the sweetness. Will absolutely be making this again!

I'd been itching to make this ever since I saw the recipe on YouTube, but my blender was packed away to move house. Finally got it unpacked and set up and made this delicious meal for dinner after a long day. Definitely one that needs two pans going so the tofu can get nice and crispy while you make the sauce. It's another simple recipe but full of flavour and a great recipe to get some leafy greens in your day!
