1¼ cups (250 g)uncooked white rice, rinsed

2 tsp (10 mL)vegetable oil

1medium onion, chopped

3garlic cloves, minced

1jalapeño, minced

1 tsp (2 g)freshly grated ginger

8.6 oz (245 g)button mushrooms, chopped

2 tsp (4 g)ground cumin

2 tsp (4 g)ground coriander

½ tspsalt

1⅔ cups (399 mL)canned crushed tomatoes

1⅔ cups (399 mL)canned full-fat coconut milk
-
1⅓ cups (236 g)cooked kidney beans
-
2 cups (60 g)fresh spinach
-
½lime, juiced
Directions
- Cook the rice according to the package instructions.
- In a large pot over medium-high heat, add the oil and onion. Cook for 3 - 4 minutes, stirring often.
- Next, add the garlic, jalapeño, and ginger and cook for another 2 minutes.
- Next add in the mushrooms, garam masala, cumin, coriander, and salt and cook for 4 - 5 minutes, or until most of the liquid from the mushrooms evaporates.
- Add the tomatoes, coconut milk, and kidney beans. Stir and bring to a gentle boil. Cook uncovered for 5 - 8 minutes, stirring often. Then add in the spinach and stir until wilted.
- Before serving, squeeze in the lime juice. Serve with rice or naan, garnish, and enjoy!

- This curry will keep in the fridge in an airtight container for up to 3 days or in the freezer for up to 1 month.

I love this curry! It's so quick to make which is perfect for busy days! There's plenty of veg and beans for it to feel healthy and the coconut milk gives it a nice indulgence. Super tasty!

This curry is so so good! To be honest kidney beans don't really scream flavour to me so from the title I thought it might be bland, but of course it's one of your recipes so I should have known it would taste amazing. It did take me longer than 20min to make, but it was still quick and uncomplicated. I added an extra clove of garlic and an extra cup of spinach. The flavour really amazed me, I was instantly addicted!! It reminds me and my dad of some of the curry we had when we visited Japan earlier this year, so it was also nostalgic :) The rest of my family loved this recipe as well, it will definitely be a repeat!! One of our all time favourite curries! 😁We use dried jalapeño flakes in the curry (easier available where we live and even quicker to cook) & usually add a side of sautéed green beans for an extra crunch of veggies on the side + depending on the spicyness, we sometimes top with some soy or coconut yoghurt 🤍
My husband and I love this recipe! We experimented with maitake mushrooms instead of button. We added 6 cloves of garlic and replaced the kidney beans with lentils. Would highly recommend! Lime and jalapeno are fantastic garnishes!

Very good and easy to make! Like a few others noted, the curry was a bit thinner than I would have preferred. Next time, I will perhaps use coconut cream. If this says anything about how tasty this dish is ... we ran out of naan, so my husband got a piece of sliced bread to sop up every drop from his plate :-)

This was the first recipe of yours I tried out because I can't resist a dish with mushrooms in it. This was such a pleasant surprise. The flavours are so rich, but gentle on the palette at the same time. It feels like a dish that really looks after ya! Like a hug in a bowl. I'll return to this one for sure. I used coconut cream instead of milk which seemed to work just fine and keep the consistency gloopy without being too soupy, haha.

It was delicious, no question - but a bit too liquid-y and just not as flavorful as the other PUL recipes I’m used to. So probably won’t make it again - but it was still delicious! This is the recipe criticism equivalent of first world problems ^^
Recipe #2 for me and it was amazing! I only had black beans so I used those instead and I think it was a bit too much liquid because I used natural tomatoes instead of tinned crushed tomatoes, but I let it to simmer a bit longer and it was perfect!
I wonder if there is a video to know the best way to chop mushrooms… I seem to always chop them in a a different way, but I assume there is a ‘chef-professional-walk of doing it.? Thank you PUL team for this recipe… and many more to come for me ;)

Hello, so I'm from Pakistan and some of these ingredients can be hard to find e.g. fresh mushrooms, Jalapeno and even baby spinach (although Mushrooms and jalapeno can be found in cans but as you said earlier using the fresh ones will give more taste to it and baby spinach is a bit more expensive than the adult spinach hahah... My goal is to find fresh ingredients even if I have to go to the end of my city. I m obsessed with your recipes try them because of my dad mainly cause he's diabetic and the first thing I tired was your roasted cauliflower lentil spinach curry which was such a hit with him. I made it in a batch and he loves it so much that he sometimes drink it as a soup. I wanted to thankyou as well because the website is so well designed and so helpful, each recipe has a nutrition card underneath to show it nutrition value and above all its yummy and a comfort food. My dad has recently changed his ways a bit from the habit of snacking and just depending on meds, I have encouraged him to exercise at home and not depend on meds, I think there is a bit of encouragements comes from you too, I see how you say eat and exercise and that does change your mindset you stop depending on supplements not that we depend on them but someone as educated as you officially saying that providing us with the science behind gives my dad's long-term philosophy some validation. One more question can we use canned jalapenos?

I very rarely follow recipes to the letter but I was intrigued by the beans, mushrooms, spinach and nothing else in this curry (I usually add tons of different things) and it was brilliant! A mix I would have never tried without you and it was well worth it! :)
Speedy, cheep and delicious! Not many dishes fullfil all these criteria. Added an extra can of kidney beans to increase protein levels.
I came across the YouTube channel only last night, I have recently got more into cooking with just plant based products, I was really happy to discover this channel and website as I love the variety of recipes I cooked this recipe this evening and it was delicious, easy to prepare, smelled good and is very affordable.

This was absolutely delicious! Kidney beans are not my favourite but I had a can lurking in the pantry. This was quick and I had everything on hand. I found the spice mild, but lovely and I think it packs a good nutritional punch.
I did cook it down a bit more than recipe stated before adding spinach - I wanted it a bit thicker. Probably 15 minutes additional simmer time? I also used the entire can of beans - more than recipe called for as its what I had on hand. Wondering if I should have cooked my mushrooms down a bit more? Either way, turned out really tasty.

I'm new to being vegan. I'm trying to focus on pantry meals with a little fresh produce to make it easier. I'm a full time working mom so easy is fantastic. This recipe fits the bill. I had everything on hand. This was absolutely amazing. I paired with a side salad to get in more greens. Dinner on the table in less than 30 min. Such a well balanced meal and so comforting. First of all, I love your channel. Second, this food was delicious and felt rich in nutrition with all the different ingredients. But it seemed a bit too watery to me and was less flavourish than I expected. I plan to try it next time in a pan and to make it more creamy.
I tried it, and I LOVED IT, it was absolutely delicious. It's directly going into my small list of vegan meals I'm trying to build up little by little. It took me almost 45 minutes to cook though, but I know I can improve that by just doing it again 2 or 3 times. If only I had someone just telling me what I have to do next :D

This was delicious!
I did switch a few things, though. Instead of using button mushrooms, I used shiitake, maitake, and another Japanese mushroom. Then I omitted the jalapeño due to a sensitivity to spicy food. Lastly, I added a bunch more garlic since I love garlic.
This is definitely a make again dish.

This was insanely good and so easy. We will probably put on our regular rotation. My kids like beans but don't like seeing the mushrooms so we put them in a food processor and they blended in seamlessly in the sauce. Can't recommend this enough.
This recipe is so easy and flavorful! I love that in uses plenty of pantry staples (at least in our house), so the only "special" thing I needed to pick up at the store was Jalapeno. My dish didn't have as much heat as I would've liked (I think the pepper I bought wasn't as spicy as usual), so I added some Yuzu Hot Sauce to my bowl and it added just the right amount of acidity and heat that my husband and I love! He has requested this to be added to our dinner rotation, and with how simple it is to make, I'm happy to oblige!

Hey, I just wanted to say that I really loved the curry and that it tasted absolutely amazing! I am definitely going to make all my friends try it when they come over 😊 I was however wondering if the nutritional value per serving is accurate. Is this really 600 calories? I am not sure if I am missing anything but it feels like a lot less. It is still super tasty, but I might need to adjust next time and serve double servings.

Really tasty recipe. Will definitely make it again! I recommend doubling the salt, and adding an extra tsp of garam masala. Also, I added a potato for something extra, but that's because I love potato in any curry!

Thank you so much for this recipe and a lot of your other ones. I had Covid about a year ago and it flipped my taste (parosmia). There are plenty of things I can no longer eat (due to them tasting rotten or worse).
Finding your blog and your recipes helped me a lot to get back on track with giving my body the things I was craving (and my body needed). I know you don't want to concentrate on nutritional values, but cooking your recipes has me feeling stronger and more awake. As a former flexiterian, I was struggling to adjust to a lifestyle entirely without certain food groups (such as meat, but sadly also a lot of fruit and vegetables).
Your recipes, like this incredible curry, make me feel like I have the changes in my diet under control. And, most importantly, they tast delicious!

We tried this tonight and it was delicious. We took the seeds out of the jalapeño because I was planning on us eating from the same pan. In the end it was easy to cook some on the side at that point for our 10-month-old to eat it with us. She loved it too! Please consider doing a baby-friendly video so that I can expand the no-salt recipes that I’m already making.
I made this for my parents (who have to eat meat with every meal otherwise it feels incomplete for them) and they LOVED IT!! I made quite a few substitutions since they didn’t have all ingredients at their house but it was still lovely. I swapped out the garam masala for LOTS of black pepper and more cumin, used lots of powdered ginger, omitted the jalapeño, and swapped out the coconut cream for full-fat dairy whipping cream. In my opinion, the lime is what makes this dish even more delicious and unique, so make sure you try it if you have it. 10/10 recipe!
