Hey Betsy, you can use canned pumpkin if you'd like! Since it's already cooked and puréed, you may need less water to reach the right consistency. Add it after simmering the broth and blend as usual 🤗

Hey Hannah! We used a classic round orange pumpkin, like the kind you’d see at Halloween. I know in Europe, "pumpkin" can refer to various types of squash, like butternut or kabocha, which can definitely be confusing! For this recipe, we specifically used a traditional orange cooking pumpkin - or what we simply call "pumpkin" in North America. For reference, my husband's aunt had a HUGE pumpkin growing in her garden (it was so big it gave Cinderella vibes), and she sliced me off a big chunk which I then used to make this soup recipe. If you'd prefer, a sugar pumpkin (a smaller, sweeter version of the Halloween pumpkin) or even butternut squash would work well too. Just steer clear of decorative pumpkins - they’re too watery/bland for cooking. Hope this helps! 😊

I am in my easy soups season and it was really easy to make especially with frozen, already cut pumpkin cubes 🙈 oh and i used rice cream instead of soy, it worked too.

Really lovely and simple pumpkin soup. I simplified it further by not adding paprika, pepper and chilli and reducing the ginger slightly - in part to make it toddler palatable. It’s a light soup, not very thick, but I don’t mind that.

I followed the recipe step by step. The consistency of the soup is too watery for me. Therefore the taste of ginger is very present in comparison to the pumpkin.

I loved the soup flavor and texture with extra minced garlic added with the ginger because I’m hopelessly addicted. It’s my new go-to smooth winter soup. The texture was smooth after blending in batches - much like a store bought tomato soup.
It was “too gingery” for my family, so we added pumpkin purée to stretch out the leftovers and they loved this milder, and thicker smoothie like version.

This soup is indeed very delicious. I supplemented fresh ginger for dried grounded one and fresh pumpkin for frozen. And I didn't take the absolute exact amount of measurements. I added a little or put a little bit less of one or another ingredient. And for me, it added up to just the right amount of spice and heat. And i am savouring this soup right now. Did a big pot of it, so i have another 2 servings tomorrow for lunch and the rest i put into my freezer.
