Green pea soup

2 tsp (10 mL)vegetable oil

2garlic cloves, minced

1small onion, diced

1 tsp (1 g)dried thyme

2 cups (276 g)frozen green peas

1 cup (140 g)frozen shelled edamame

4 cups (960 mL)vegetable stock†

½ cup (65 g)raw cashews, preferably soaked for at least 2 hours, drained

1 pinchsalt, plus more to taste

1 pinchground black pepper, plus more to taste

Directions
- Heat the oil in a large pot on medium-high heat, then add the onions and garlic and sauté until lightly golden, about 5 minutes. Add splashes of water as needed to deglaze the pot.
- Add the remaining ingredients, bring to a boil, reduce to a simmer, and partially cover with a lid. Let simmer for 15 minutes.
- Remove the pot from the heat and use an immersion blender or standing blender to blend the soup until creamy.
- Serve while hot, and top with crunchy croutons - enjoy!
Notes
- †Can substitute each cup of stock for ½ vegetable bouillon cube plus 1 cup (240 mL) water.
Storage
- Keep in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.

While I was away from home, my freezer thawed. This recipe turned out to be a success, because not only did I use defrosted peas and edamame, but it also turned out delicious :) I will come back to this recipe. Quick and tasty ❤️

I was given a very large bag of frozen peas and found this recipe when looking for ways to use them. Had all the ingredients on hand and made this soup tonight. It was definitely easy. Packed with nutrients and very filling. Enjoyed the texture/ consistency. I was a little disappointed that it mostly just tasted like peas - was hoping for a little more flavor, but overall, made a nice and simple meal. I think some crumbled bacon on top would be delish with this. Thank you for the recipe!

I soaked the cashews in hot water for 30ish mins because I didn’t have a lot of time and when I used a high-powered stand mixer, it blended wonderfully. Truly fantastic - a staple now for me, thank you Sadia and team!
I didn’t have enough time to soak the cashews so I omitted them. It still turned out very delicious and creamy.
I did something wrong here, it’s tricky with cooking in the metrics system, cause I think I had waaay to much liquid. It ended up being kind of like flavoured water 😅😬

This recipe is not only delicious, but also very quick and cheap to make. I often make this ever since I started college because I am on a tight budget. I didn't have any cashews so I skipped them, swapped dried thyme with dried oregano, but still turned out great. I highly recommend making this with the croutons. I just pan fried a slice of bread with some dried herbs and spices and the meal is instantly filling.

This recipe was absolutely delicious. The blend of flavors is really approachable and comforting.
I unfortunately struggled with the texture on this one. I used a good immersion blender that has worked well in other applications. No matter how long I spent blending, I was never able to break up the "skins" of the peas. The dried thyme, in addition, remained twiggy after cooking. So I sort of had to chew the soup, but hey, I happily ate the entire batch anyway.
My takeaway is that getting a nice, smooth texture might be more difficult for us folks who don't have high-powered blenders, and that fresh thyme might be a nice addition. But all in all, I'm game to try it again!

Nice and light green soup. Love the vibrant color but it wasn't substantial enough to be a meal in itself for us, so I would recommend pairing it with something as well.
