This bright pea soup recipe is great in both warmer or colder months. Try it cold, like a gazpacho in the summer, or have it simmering away on the stove during winter. It's also an incredible source of protein, from both the green peas and edamame.
Heat the oil in a large pot on medium-high heat, then add the onions and garlic and sauté until lightly golden, about 5 minutes. Add splashes of water as needed to deglaze the pot.
Add the remaining ingredients, bring to a boil, reduce to a simmer, and partially cover with a lid. Let simmer for 15 minutes.
Remove the pot from the heat and use an immersion blender or standing blender to blend the soup until creamy.
Serve while hot, and top with crunchy croutons - enjoy!

†Can substitute each cup of stock for ½ vegetable bouillon cube plus 1 cup (240 mL) water.

I was given a very large bag of frozen peas and found this recipe when looking for ways to use them. Had all the ingredients on hand and made this soup tonight. It was definitely easy. Packed with nutrients and very filling. Enjoyed the texture/ consistency. I was a little disappointed that it mostly just tasted like peas - was hoping for a little more flavor, but overall, made a nice and simple meal. I think some crumbled bacon on top would be delish with this. Thank you for the recipe!

This recipe is not only delicious, but also very quick and cheap to make. I often make this ever since I started college because I am on a tight budget. I didn't have any cashews so I skipped them, swapped dried thyme with dried oregano, but still turned out great. I highly recommend making this with the croutons. I just pan fried a slice of bread with some dried herbs and spices and the meal is instantly filling.

Hey Effy! The cashews serve to make the soup a little bit thicker. You could leave them out entirely, or substitute them for some pre-soaked sunflower seeds, or equal parts unsweetened plant-based creamer, like soy creamer or oat creamer. We hope you enjoy the soup 😊

This recipe was absolutely delicious. The blend of flavors is really approachable and comforting.
I unfortunately struggled with the texture on this one. I used a good immersion blender that has worked well in other applications. No matter how long I spent blending, I was never able to break up the "skins" of the peas. The dried thyme, in addition, remained twiggy after cooking. So I sort of had to chew the soup, but hey, I happily ate the entire batch anyway.
My takeaway is that getting a nice, smooth texture might be more difficult for us folks who don't have high-powered blenders, and that fresh thyme might be a nice addition. But all in all, I'm game to try it again!

Nice and light green soup. Love the vibrant color but it wasn't substantial enough to be a meal in itself for us, so I would recommend pairing it with something as well.

Hey Bec, a serving is around 1.5 cups (375 mL) although in real life it may depend on some factors such as how long you leave the soup on the stove as some will evaporate or how big the onion used is 😊
