Another great one! My picky hubby enjoyed it! I did have to add real cheese to his but that's about it. Everything else was vegan. So easy to make vegetarian for those who aren't ready to let go of dairy but still need to eat more veggies. What kind of vegetarian doesn't like vegetables? My husband lol. Which is why this recipe is so special! Thank you❤️

Hi, I just made this. It came together really easily and was delicious. I left out the olives and cooked brown lentils from scratch - putting them on first and stirring them through the sauce just before stuffing the zucchini - so it didn’t take much longer than using canned lentils. The best thing though was that I did not feel like cooking at all tonight but had some zucchini in the fridge so I just searched zucchini here, saw this simple recipe and voilà. Thanks!

This was so good! The zucchini was perfectly cooked. The only addition I made was to add a little citrus on top before eating (I felt like it needed an acid). Will definitely being using this recipe a lot this summer!

Very tasty I was happy not to see a cheese loaded filling. In late spring and summer it is always a challenge to find taste uses for zucchini. I never tried scooping and pre baking the skin. I used a mix of dry and fresh herbs. The smell from the oven filled the kitchen. Definitely a keeper.
