Hi can I not add carrots is there a replacement for carrots

Heyy, Jadamarie! Ooh a bit tricky to say as carrots are so integral to this recipe in particular. You can leave the carrots out if you’d like, but we added them for sweetness, colour, and a bit of texture to the risotto, and it's hard to say 100% how it'll turn out with a straight omission. If you’d like to replace the carrots, finely chopped bell pepper could work, or best yet, we have several other published risotto recipes that exclude carrot and might be a better fit.
