This hearty Italian-inspired lentil soup is easy to make and is perfect for colder evenings. It was inspired by aromatic herbs used in Italian cuisine and a variety of fresh veggies, often used in soups like minestrone. With a few simple ingredients, you can prepare a delicious meal. We loaded the soup with fresh veggies, and aromatic herbs to enhance the flavour of the legumes, and make the soup more vibrant. You can serve it with a slice of rustic bread, or add crunchy croutons on top.

Amazing as usual!! I would recommend adding more water if you add greens or want it more brothy (I ended up adding kale too and delicious but more like stew!

Hi there, Stéphanie! You can add a handful of spinach, kale, or Swiss chard toward the end of cooking for extra greens. Just stir them in and let them wilt for a few minutes before serving 😊

Simple soups are my favorite winter dinner. Swapped the Italian seasoning with paprika for a Spanish style and it was awesome. Crusty bread takes it over the top!

I initially made this recipe with the goal of having something healthy rather than expecting amazing flavors. I’m not typically a fan of lentils, so I was genuinely surprised by how complex and delicious this soup turned out! The flavors are rich and well-balanced, making it much more enjoyable than I anticipated. There is a generous amount of lentils, so I might use a little less next time, but overall, it's a hearty and satisfying dish.

I added double the veggies chopped into big chunks, a dash of cumin, a whole heirloom tomato sliced into wedges, a heaping teaspoon beef broth bouillon, and a tablespoon of red pepper flakes. So cozy and simple to make. and All the veggies and lentils were cooked perfectly. Definitely a new fav for me! Thanks PUL team 🫶🏻

Such lovely flavor! Very little liquid but it was so enjoyable. I ate it with roasted butternut squash and steamed broccoli and I’m already looking forward to leftovers tomorrow! More than 2 servings, for sure

Maybe not my wisest choice with this hot weather, but I loved this dish! There are a couple of similar lentil recipes like this one on the app, but I simply love the way you prepare and cook them! I really can't decide which of these I like more!

According to my 16 month old granddaughter it is yummy. She not only ate her portion with gusto. When that was finished she wanted some of her mothers. Yet another great recipe for our toddler and us. The flavors are subtle but flavorful. I probably doubled the carrots. Probably next time I will reduce the lentils and replace it with mushrooms and soy ground to increase the nutrient profile and diversify the umami flavor. Thank you. P I’m gonna.

I’ve been vegan a little over a year and something I notice in so many recipe comments is lots of “I added this…” or “I substituted …(multiple things)…” so I’m left wondering why they are commenting on your recipe when they totally remade it. 🤷🏼‍♀️ Well, I made it exactly like you said and it was delicious!

I added some vegan Worcester sauce and some chili flakes as garnish.
Sure was great without this, but I like some extra punch and heat.
Also, I substitutes the fresh tomatoes for canned crushed tomatoes.

Really liked this, the 'make' feature made it super easy to follow along. I used spinach instead of kale as it's what I had on hand. I added some nutritional yeast too, and made a big batch so I could freeze some.

Next time, I'll probably add some garlic just because I love garlic. I think this would work well with cannellini beans instead of potatoes too so may give that a try. :)

Could you substitute canned crushed tomatoes for the cherry tomatoes in this recipe?

Hi Connor, you certainly can! The canned version might be a touch more acidic (less sweet) than using cherry tomatoes, so if you find the soup a bit tart, adding a tiny little bit of agave syrup or sugar should help to balance that out :) enjoy!

Loved this!!! Made a 5 serving size as I like to prep my work lunches in advance. Ended up having a large serving leftover which my other half had & he loved it. Way more flavor than I expected it to have for such basic ingredients. Recommend & I will make this over & over.

This soup really surprised me. It is so savory and satisfying! Also not to mention, the two servings I made lasted me at least 4 days. I highly recommend this. The first time I made it I had leftover leeks and celery since It's hard to buy one at a time, so I chopped and froze them to use in another batch. Worked great! I will absolutely continue to make this and share it with my family and friends too.
