Mediterranean Potato Hash

This Mediterranean potato hash is simple, hearty, and full of flavour. Tender potatoes and sweet roasted peppers come together with a touch of warm spices. Olives add a little briny kick, while fresh herbs keep it bright. It's easy to make and just as good for dinner as it is for breakfast. Serve it with creamy hummus and avocado, or enjoy it on its own. Either way, it is the kind of meal that feels both satisfying and effortless.

Hi team!
I loved the flavor profile so much in this 😊, but the texture was just quite mushy/didn't have any variance in texture, and so overall I didn't enjoy it dish too much -- I'm wondering if there is anything crunchy(or another texture you'd recommend) that I can add to this?

Hiya Preethi! Thanks so much for giving it a try and for the feedback đŸ€— You could top this one with some crispy roasted chickpeas. A fresh cucumber salad on the side would also add a nice crunch and contrast!

To help prevent mushiness, we also recommend using all-purpose potatoes, such as Yukon Gold, as they tend to hold their shape better during cooking while still becoming tender and creamy. It's also helpful to let the potatoes develop some colour in step 2 before adding the liquid, and to avoid overcooking them once they're fork-tender. Cutting the potatoes into slightly larger pieces may help as well. We hope these tips help if you decide to give it another try đŸ«¶âœš

This is such a great savory breakfast option for the weekend and it doesn't require much effort, so you'll actually want to make it in the morning (or at any time really). Surprisingly, we love the addition of chickpea flour in here (although we were quite dubious at first), it adds a nice flavour and texture to the dish and it doesn't make the hash dry at all (as we were afraid it would). The olives, capers and roasted bell pepper are a must for this one!

Woohoo! So happy to hear it was enjoyed, Annie â˜ș thanks soo much for sharing your experience with this one đŸ«¶

Hi there, Marguerite! Thanks so much for the thoughtful review, and for the 5 stars đŸ€—

The chickpea flour is in this recipe to help thicken everything and lightly coat the potatoes. It's kind of like a soft, savoury binding that brings the flavours together, rather than for protein. That said, it’s definitely a preference thing, and your idea of sautĂ©ing the potatoes and skipping it altogether is great for a different hash texture đŸ«¶

Im in love with this recipe. I ran out of Yukon gold potatoes partway through and did half russet potatoes and it still worked really well!

This was so so good. I tweaked the recipe a bit by adding a whole fresh red bell pepper instead of a jarred one and also sprinkled a little bit of vegan feta on top that I had to use up. Will definitely be making this again. Thank you!

And another perfect weekday dinner in the pocket. People, I don't have enough days in my week to cover all these amazing dishes in this app :-)
One thing about the potatoes: it's not really clear how many are needed, on the ingredient list it says 2 medium potatoes but in the description it says "for us, 5 potatoes weighed 400grams".

Gosh, this made us smile, Jonathan! So happy you’re enjoying the recipes and adding another weekday dinner to the rotation â˜ș

Thanks so much for flagging the potato note, too. We originally made this one with 5 small potatoes weighing 400 g, then updated the recipe to 2 medium potatoes at the same weight. We’ve corrected the note to match the ingredient list and make it clearer ✹

Had leftover olives and potatoes, so I decided to make this. It’s super delicious and easy!

Very tasty! Easy to make and packed full of flavour. Exchabged hummus for unsweetened soygurt.
