Tahini dressing

2 Tbsp (30ml)fresh lemon juice†

1 Tbsp (15ml)red wine vinegar

1garlic clove, crushed

Directions
- Add all of the ingredients to a jar.
- Mix until smooth. The mixture might appear too thin at first, but just keep stirring! It will naturally thicken.
- Pour over your favourite salad, toss to coat, and enjoy!
Notes
- †Use golden tahini made from lightly toasted sesame seeds, rather than pale tahini made from raw seeds.
- †For us, 1 lemon yielded about 2 Tbsp (30 mL) of lemon juice.

- Store in an airtight container in the fridge for up to 4 days.

This recipe is so easy and delicious! It's crazy how creamy it is from the tahini. It coats kale really well for a kale salad, but it's good on any greens & veg. I sometimes will use powdered garlic to make it quicker, and just shake it up in a jar. It's almost just as good as the fresh garlic clove.
