This simple dressing with shallots is a quick and elegant way to elevate everyday salads. Ingredients

Shallot dressing

  • 1
    medium shallot, thinly sliced
  • ⅓ cups (80ml)
    extra-virgin olive oil
  • ¼ cups (60ml)
    white wine vinegar
  • ¼ cups (60ml)
  • 2 tsp (10ml)
    dijon mustard
  • ½ tsp
    salt
  • ½ tsp
    ground black pepper

Directions

  1. Combine the shallot and vinegar in a small bowl. Let sit for at least 3 minutes to help soften the shallot and infuse the vinegar.
  2. Add the remaining ingredients and whisk to emulsify.
  3. The dressing is ready to use over your favourite salad. Enjoy!

Storage

  • This dressing can be stored in an airtight container or jar in the fridge for up to 2 days.

Yes, but it’s best enjoyed within 2 days for the freshest flavour. Since it’s a dressing made with olive oil and no stabilizers, separation is natural. Just stir or shake it before serving!

I can not get maple syrup or agave syrup where I live. Can I use honey as a substitute?

Love this dressing! I used it for a pasta salad and it tasted fresh and delicious. I reduced the amount of maple syrup a bit because I'm not a fan of sweet dressings.
