I was about to make this for lunch and found out I ran out of couscous. I cooked some quiona and used that instead and it works perfectly fine as a substitution. And the salad is delicious! I will definitely have to make this more often.

Very tasty! I had it for lunch today, plus I prepped 3 jars for the week. I swapped red bell pepper for yellow one, kalamata olives for black ones, and red wine vinegar for apple cider one. That's just what I had on hand today.

I used whole grain quinoa, which worked really well. Dressing brought it all together nicely.

Super yummy! But the text does not add up with the measurements. When upping portions it still says 5 tablespoons of dressing. But nevertheless very good!!

although I‘m not usually very crazy about salads, I‘m crazy about this one. I added a few drops of sweetener to the dressing to soften the sourness and added dill instead of basil because I didn’t have it at home. The salad is super easy and quick to make and sooo delicious. Can’t wait to try out other salad recipes.
I don’t know if I did something wrong, but I made this for 6 people and the salad was swimming in dressing and it’s way too sour for my taste I’m afraid. I wish there was something sweet to balance out the vinegar, lemon and Dijon mustard.
Delicious! The perfect salad for a hot, summer day! I served this on top of some leftover rocket which added a nice nutty flavour!
Very refreshing! I do wish the recipe added time and instructions for cooking the lentils. I know it states to start with pre cooked lentils, but that’s not an accurate reflection of the recipe for me. Maybe for others 🤗 thank you
