Potatoes

35 oz (1000 g)baby potatoes

¼ cup (60 mL)olive oil

1 tsp (2 g)ground cumin

1 tsp (2 g)onion powder

½ tsppaprika powder

½ tspsalt
Dressing
-
¾ cup (180 mL)unsweetened soy yogurt
-
1lemon, juiced
-
1garlic clove, crushed
-
2 tsp (10 mL)dijon mustard

¼ tspsalt
Assembly
-
1cucumber, chopped
-
½small red onion, minced
-
2 Tbsp (2 g)fresh parsley, chopped
-
2 Tbsp (2 g)fresh dill, chopped
Directions
- Cook the potatoes in a large pot of salted simmering water, for 15 - 20 minutes, or until tender.
- Meanwhile, mix the oil with the spices in a small bowl. Set aside.
- When the potatoes are cooked, drain and pat dry, then line two baking trays and preheat the oven to 430°F (220°C)*.
- Flatten the potatoes on the baking tray into 1 cm thick disks using the bottom of a cup.
- Brush the spiced oil onto the smashed potatoes, reserving the leftover oil for later. Bake for 20 minutes.
- Give the potatoes a flip, brush on the leftover oil and bake for another 20 - 30 minutes until golden and slightly crispy.
- Meanwhile, mix together all the dressing ingredients in a large bowl.
- Add the veggies and mix again.
- When the potatoes are done, let them cool for a few minutes, then toss them in the large bowl as well, and serve. Enjoy!
Notes
- * We used top and bottom heating (not fan-assisted/convection).
Storage
- This salad is best when enjoyed immediately after assembling.
- Alternatively, store the baked smashed potatoes and the salad dressing ingredients separately in airtight containers in the fridge for up to 2 days.

Excellent recipe, preparing it will be worth your while. The salad dressing is perfect.
I just made it, it is really delicious and I will very probably do it again in the near future. But one thing I got to mention, the marinade for the potatos was a little bit to short for the other side of the potatos, so that I could only cover like half of those. So just gonna add a bit of extra oil the next time. :)

Incredible flavors. Fresh but also 'cosy'. I made this recipe purely because I think it looks great haha. Dill and parsley are ingredients that I never really use, but I'm glad I made it. I will definitely make this potato salad more often, and also the smashed potatoes alone.

I'd love to make this salad for a surprise party and therefore need to prepare it ahead. Has anyone done this already and has tips on how to keep the potatoes crispy? Is it enough to just assemble it directly before serving, so to store the crispy smashed potatoes seperately from the rest of the salad?
Any help and suggestions are very welcome!
I’ve made this recipe twice now and i think it’s worth boiling the potatoes for longer than 15 minutes. Definitely follow the guidance of boiling until tender. That being said, the flavours are just unreal and the creativity of baking the potatoes is so smart!

This recipe is phenomenal! Instead of boiling the potatoes, i threw them in the ikea's glass container, added couple of tbsp of water, out silicone cover in top and microwaved for 5-7 minutes. Definitely saved some time! I also used an airfryer, instead of the oven, and it took around 15 minutes to finish the potatoes.
I made this with my dad and though it took a bit longer to make than a regular potato salad recipe, it turned out fantastic! My dad gave it an 8/10, which means that he is in love with it and he is just too stubborn to grade it higher and he even asked me for the recipe! Now I am looking at what other recipe we can try together next time!

This is incredible. We had to make a couple of subs - went to 2 different supermarkets and neither had cucumbers?! So we used sweet pointy peppers instead. I also forgot to get dijon mustard so had to use the wholegrain mustard we had in the fridge. Subs both worked perfectly! Will be making this regularly, thank you for the recipe!

i was today years old when i realized i will not make potatoes any other way! why did i ever bother to cut them into fries and bake them - no, boiling, then crushing and brushing them with oil and spices is the way to go.
i like this recipe better than the classic potato salad (although very good as well) here in the app, with the addition of joghurt i tastes just so much fresher.
I have no idea why we have to go with boiling and then into the oven.
I Taste no difference to oven tray potatoes.
Next time I will skip boiling to save time and energy and just use cubed, seasoned oven tray potatoes.
Or even pre poiled potatoes.
Or even potatoe wedges...
I like the base. I can see myself using the rest of the Salad and exchange the potatoes with other stuff, like baked chickpeas, smoked Tofu or even pumpkin.

Most of my family isn’t big on sauces or dressings so I cut the amount of dressing in half and it was a hit.
The only reason I’m giving this 4 stars instead of 5 is because it’s sadly a quite time consuming recipe. I was definitely disappointed to spend 45 minutes preparing the potatoes alone…
This is the receipe that made me buy subscription!! Since I don't like dill and parsley, I replace it with cilantro as well as freshly roasted and powdered cumin and a dash of red chilli powder. This receipe is amazing.

Easy and super yummy. Had to double the amount for the potato marinade as it was not enough for both sides. I would recommend to double the recipe if you want to eat it as an only meal. As a side, I think the number of persons shown in the recipe is fine.

This looked soo good and I really wanted it to hit the spot, but it just tasted like Indian 'raita' plus some added potatoes 😭 I'm not a big fan of raita so this wasn't the great dish I thought it would be, but still good :)
Note: I did add only 1/2 to 3/4th of the mayo the recipe called for tho, so I'm not sure how much that contributed to this!!

Very refreshing and delicious. I adjusted the amounts of onion to my taste and it is so good. You have to watch your potatoes because my oven cooks quickly so one batch got overcooked. Ends were burnt.I suggest starting with 15 minutes and adding time if you need more. Loved it

I typically never touch potato salad as I find it mushy & bland, but this was a total game changer! The fresh lemon & dill keep it light and fresh and keeping the smashed potato’s separated but cooking it key to keeping them crispy and delicious! 10/10 per usual :)
The plus - as always, PULs recipe app is awesome & easy to follow! But, I'm sorry to say I was under-whelmed by this recipe. I liked the potatoes. I liked the dressing but together, not so much. It wasn't bad, but it certainly didn't satisfy my comfort food cravings. In part, my version didn't look anything like the picture - mine turned out more like potato chips (aka crisps) in Tzatziki. The dressing to potatoes ratio was way off & my crisps were drowning in dressing - rather than lightly coated - despite following the recipe verbatim. I'll be adding a lot of other veggies & treating the potatoes more like croutons. Admittedly it could be I was just expecting something different. Be that said - this salad is still worth a try. You might enjoy it!

I swapped some of the veggies in the salad to accommodate what was in the fridge but is still turned out amazing! I used green onion instead of red and added sweetheart salad and cherry tomatoes. Highly recommend!
